What are your 10 minute meal recipes?

I'm trying to juggle working full time with having a one year old and I currently cook a lot of things that take ages - it's just not working. Saw a 10 minute recipe on TikTok and tried it last night and thought This could be the answer to all my problems!

What are your genuinely 10 minute recipes?

I can't eat gluten and husband is vegetarian but we can usually adapt recipes so still tell me meaty/Wheaty things.

Quesadillas - grate some cheese and place between 2 flour tortillas (obvs can use gluten free). Add any of the following: thinly sliced tomatoes, spinach, fried thinly sliced mushrooms, refried beans from a tin, jalapeños (or just stick with plain cheese). Dry fry, flipping halfway, until each tortilla is lightly browned, the cheese is melted and any fillings are warmed up. Serve with creme fraiche, greek yoghurt or sour cream mixed with hot sauce, amd/or with salsa and/or guacamole (both of which are quick and easy to make).

Chicken and veg in pesto cream sauce - chop up and brown some chicken breasts in a pan with olive oil. Add cherry tomatoes cut in half, spinach, and/or steamed brocolli or asparagus. Heat through then turn down the heat and add an equal amount of creme fraice and basil pesto (about a tablespoon of each per chicken breast, more if you like). Stir to make a sauce and heat through. Serve with rice or mash.

Re gluten free wraps - el passo do nice corn ones. Much nicer than the standard gf ones.
Also corn cous cous/polenta is nice. As is black bean fettuccine. Much tastier than slimey gluten free pasta.

Steamed coconut buns are nice too. 1 can coconut milk, 2 cans flour (could try gf flour with a raising agent). Spoon into cup cake cases. Put in steamer for 5 mins. Slice and fill with salmon, chicken, tofu/whatever you fancy. Add spoonful of hosin sauce, fresh coriander and chopped red chillies. Served with pickled cucumber grated into long strips/thin slices (just grate and add a spoonful or two of vinegar).

I can highly recommend Jamie's 15 min meals. They usually take 30 mins if you cook all the components, but I usually miss a few things out and use for inspiration for a quicker dish.

Cous cous. Have it with ready cooked salmon or chicken breast, garlic, lemon, salt, pepper, feta, and lots of crunchy veg like cucumber or peppers.

Omelettes.

Tuna pasta can be perked up in lots of different ways.

Toasties with salad or tomato soup.

Burgers are quick to fry. Stick in some bins and leave condiments, pickles, salad etc out for everyone to put on whatever they want.

I'm also definitely a fan of slow cooker meals with enough leftovers for tomorrow's dinner.

Chicken thigh tray bake . 45 minutes to cook but 10 minutes to put together.

Pack of stuffed pasta/ gnocchi and pot of sauce
beans/ cheese/sardines on toast
boiled eggs and soldiers
pitta bread pizzas with tomato purée, grated cheese and anything you can find in the fridge
cheese omelette and baked beans

plus bags of salad with everything!

personally it takes me more than 10 minutes to do toasties.

We have to do ‘10 minute teas’ 3 days a week.

One is always a pasta and sauce / pesto / brocolli and philedelphia

One is always a pre batched cooked meal from the freezer - so chilli or curry with microwave rice, spag Bol or stew and mash (mash also made in advance and frozen and then just microwaved)

Third is a wildcard night - sometimes salad with ham or eggs or falafel, sometimes soup and toastie, scrambled or poached eggs on toast. And sometimes we go mad and do a 12 min beige air fryer tea - as fishfingers, waffles, sausages etc can all be done in that time

@Oioicaptain liking the sound of coconut buns!! I'm on a double whammy at moment as need gluten free, trying to cut carbs generally but specifically white carbs as pre diabetic and trying to lose weight too as part of that. It's quite the challenge - chicken Caesar salad works well as do omelettes!! I'm 2st down though in 6 months so that's not too bad- 3 to go!!

I'm sort of intrigued and horrified at the idea of making bolognaise in 15 minutes.

Carbonara
stir fry
prawn and pea risotto (with orzo pasta instead!)
pork steaks with potatoes/veg
pasta with a sauce and veg mixed in
gnocchi with veg (aubergine, courgette, peppers) in spicy tomato sauce

sorry forgot DH is veggie….

Eggs in sauce type recipes are quick generally. Shakshuka, eggs in purgatory, that sort of thing.

Or Turkish eggs (poached eggs on a yoghurt base).

Creamy, cheesy or tomato-y butter beans (any tinned beans really) is very quick and easy to adapt to add more veg. Serve with great, pasta, rice, whatever you like really.

Creamy mushrooms on toast/as pasta sauce is quick too. Also easy to add extra veg to.
