What are your 10 minute meal recipes?

I'm trying to juggle working full time with having a one year old and I currently cook a lot of things that take ages - it's just not working. Saw a 10 minute recipe on TikTok and tried it last night and thought This could be the answer to all my problems!

What are your genuinely 10 minute recipes?

I can't eat gluten and husband is vegetarian but we can usually adapt recipes so still tell me meaty/Wheaty things.

A bag of stir fry veg, cooked chicken / prawns / tofu and either microwave rice or rice noodles.

On the days I can't be bothered but want something healthy, I do a salad:

spinach
tomato and mozzarella
one avocado
two boiled eggs
houmous

Quesadillas with blackbeans and veggies. Use ready made tortillas and open a can of beans, sweetcorn, chop veggies or I sometimes use Frozen bag of roasted veggies from Waitrose. Add cheese, on a hot skillet and done! Serve with salad on the side and hot sauce
I have a pressure cooker, so I can make a mushroom or any veggie curry in 10 mins. I chuck rice in the microwave and inner is ready is under 15 mins.

Google Tex Mex Tacos on BBC Good Food site.

Basically you brown the mince for a few minutes, fry off herbs and spices then add together.

Eat with tacos, sour cream and grated cheddar and a few baby tomatoes.

All ready in 10mins.

My very food-limited autistic son will eat mince done this way because it's dry.

Meatballs with pasta and sauce. Meatballs, the mini ones only take a few minutes in the airfryer. Boil fresh pasta, add sauce. I also do a bit of garlic bread again in the airfryer.

@Redshoeblueshoe and @longtompot I hadn't come across potato cakes before, great idea. I often make crushed potatoes so will make double the amount and turn the leftovers into potato cakes!

@IFancySomeone this looks great. I can't eat couscous but can use quinoa instead which I'm sure will work

A thing of chorizo sliced and fried. Add two tins of tomatoes and two tins of butter beans. Simmer for a few minutes. Season and serve with fresh pesto stirred through.

Can Anyone recommend any gluten free couscous?? I love couscous and have given it a swerve since suddenly developing gluten intolerance late last year post covid

Almost anything Ramen based.

If you spend a short amount of time meal prepping at the beginning of the week it's a lot easier and opens up your options significantly- eg cooked potatoes, hard boiled eggs, cooked rice, cooked meat and fish, chopped veg ready to go in the fridge.

It's a little more than 10 minutes but the easiest and most eaten 'recipe' I make is a lentil curry - 1 onion, garlic if you like it, cook it up, add a teaspoon of curry powder,a teaspoon of turmeric, let it simmer, add 600ml, chilli if you want spice, 150g (or so) of washed red lentils. Bring it to the boil cover and simmer until the lentils are cooked. I sometimes add a bit of mango chutney and/or coconut cream if I fancy.

You can add veg or meat to it easily and it works well with some naan breads, on a jacket potato or with rice etc. Obviously it's nothing special but is very nice for how simple it is.

Halloumi and mushroom burger with side salad.

Cheese and spinach omelette with toast.

I often throw a 12 hour day. It's dh, dd (grown up) and me.

Salmon fillets, pasta with pesto, bag of rocket and stuff.

Meatballs, jar sauce, vacuum packed rice, salad bowl.

Chicken thighs, marinaded in lemon, garlic and paprika, with crispy sliced potatoes and bagged leaves, cu, Tom, pepper.

At this time of year barbecue bits with bean salad, potato salad, green salad.

Quiche, salad, new potatoes

Charlie Bighams for 2 + 1 with veg or salad. (Tescos do frozen packs of peas, corn, spinach, broc)

Stir fry with beef, chicken, salmon and rice

Omelette, bead and butter and salad. Could do chips.

Stuffed peppers or marrow with rice. I use a spag bol filling but you could just use Tomato sauce (fresh) with herbs, celery, olives, etc. With lots of leaves. The rice and sauce can be cooked in advance.

Fried halloumi with lime and garlic with roasted new spuds and Greek salad.

Smoked salmon, prawns, good bread and salad.

Caesar salad and bung in mozzarella, roasted tomatoes, olives and good bread. I whack shredded chicken on the top.

Anything with eggs, boiled egg and soldiers would get my vote out of all of them.
I make Jamie Oliver’s anchovy pasta and it’s a crowd pleaser (obviously only if you’re a fish fan), I’d say it’s maybe a 15 minute job as you need to make a toast up the breadcrumb concoction but it’s well worth it and absolutely fantastic.

Use packets of microwaveable rice to make fried rice (you can use GF tamari/soy sauce). I use frozen soffrito mix for veg in it if I need to be quick (because there’s no chopping). You can throw almost anything you like in fried rice.

DS likes Sainsbury’s GF spinach and ricotta filled pasta, served with really quick tomato sauce.

Eggy bread/French toast is a good way of having GF bread.

This is a 10 min one pot macaroni cheese recipe that works with GF pasta. https://www.seriouseats.com/ingredient-stovetop-mac-and-cheese-recipe

You can use rice paper as a base for a sort of pizza-like (e.g. https://www.wandercooks.com/vietnamese-pizza-banh-trang-nuong) or quesadilla-like if you use a sheet top and bottom
and flip it. You can stick anything in there.

Or you can just wrap stuff up in the rice paper and eat it, or fry it and eat it. Lots of very quick options. make sure to check the rice paper is GF - proper Vietnamese rice paper is GF and you can get it on Amazon.

Korean pancakes can be made with GF flour. They’re very quick and easy to make and you can put any veg you like in there. Shred it up in a food processor if you have one. Or just use a bag of ready shredded stir fry stuff.

Noodles, smoked tofu, veg, itsu miso chilli soup sachet and fresh coriander (sometimes a poached egg on top too). All in one pan on the stove for 5 minutes.

Fresh tuna wraps - sear fresh tuna on both sides, grated cheese, fresh peppers/tomatoes/advocado/pineapple , wasabi and soy sauce.

Rice (could use microwavable rice to save time), baked salmon with grated lime, lime juice, sesame oil and drizzle of honey. Baked for 12 mins. Served with microwaveable edamame.

Put water on to boil for rice. Get out of the cupboard/freezer a can of chick peas, a bag of frozen roast veggies, a jar of curry sauce and the rice. Stick roast veggies in the microwave to defrost while you open the chick peas and the curry sauce and put them in a pan. Put rice on to cook Stir the defrosted veggies into the chick peas and sauce mix and heat through while the rice cooks.

You can shave a couple of minutes off this by putting a pack of 90 second rice in the microwave. Alternatively, add naan breads to your storecupboard and serve with those. Serve with a dollop of mango chutney.
