Aperol at home. Am I missing something?

I often have a G&T of a weekend evening but fancied an Aperol spritz tonight. I have all of the ingredients but it strikes me as a waste to open a bottle of Prosecco & another of soda water when I just want one drink. I probably wouldn't have another until next Friday or Saturday and imagine both bottles will have gone flat by then. I don't want them cluttering up the fridge either! Is there an alternative? Am I missing something? I swear friends & colleagues have one of these of an evening and it's just them drinking it.

I usually coordinate with DH, as he likes a glass of prosecco. Between us, we can usually see off a bottle. An Aperol Spritz in my own back garden is one of my favourite things.

Of course, I also have adult DCs so no open bottle of alcohol ever goes to waste. 🙄

Well.. I don't usually find an open bottle of Prosecco to be problematic.

However, for time like these you need one of those champagne bottle stoppers. They'll keep the opened bottle fizzy for some time.

This is deeply worrying.

I ordered an aperol spritz this week at a pub this week (small village pub but painfully gentrified) and the bar person poured one measure of aperol and then filled the glass up to the top with soda. I asked her about the prosecco and she said oh sorry this is how I always make it home, I didn't realise it was meant to have prosecco in it 😧

I usually make it with regular wine and mini cans of soda water. Might crack open a cheap bottle of cava if making a couple.

Fever Tree do little tins (cans? What's the difference?) of blood orange soda water and it's gorgeous with Aperol. I prefer it without the Prosecco, oddly.

I'll look out for those. That sounds delicious.

It doesnt have to have Prosecco in it
In Italy there are 2 kinds and 2 prices. Most Aperol in bars is just aperol with tonic for a couple of euro but you can have Prosecco added for more money.

I was gonna say it doesn't need the tonic/ soda! 😬
Put loads of ice in instead.
