About to put a joint of pork in the slow cooker before I go to work. Can I just pour a load of bbq sauce over it and stick it on?

Yes.

If you have them cut up a couple of onions and a pepper. Or even stick some carrots or a couple of potato's quartered.

If the pork has the really thick fat/skin on - I take that off - usually scissors are the easiest way.
