After buying into the hype around 2 yrs ago I bought an instant pot. I made 2 or 3 dishes that went straight in the bin and it has been a very expensive doorstop for the backdoor ever since.

This morning, after tripping over the fucker for the 1000th time, I decided enough is enough. It's going on ebay/charity shop or bin unless I can make something edible in it for dinner tonight. If anyone wants to save the life on an innocent instant pot then please share your fail-safe recipes.

I really like doing a joint of meat in mine e.g. shredded beef which I can then put in pies, pasties, tacos, burritos, sandwiches etc.

Make 200ml of beef stock and pour into the instant pot.

Chop an onion into thick slices and lay on the bottom of the pot to use as a trivet.

Roll a 1.6kg joint of beef in whatever seasoning/herbs and spices you want to use and lay on the onions.

Cook on high pressure for 1hr 45mins then let it natural release the pressure.

Pour the excess liquid into a container, shred the beef with two forks and you can add spoonfuls of the meat juices if you like the meat juicier.

You can do this with any joint of meat. Chicken works well (use chicken or veg stock) and so does gammon (I use half water, half apple juice for the liquid.)
