I need salad inspiration - tell me your ideas!

During last year I started making salads for lunch - I make a big one (in the evening if I’m in the office the next day or at lunch time if I’m working from home) and it lasts two days. This has really helped me feel healthy and maintain weight and I want to keep it going. I have three that I rotate. They are yummy but I’m getting bored of them! I need inspiration for new ones.

I do:

  • chicken/Turkey with avocado, walnuts, cherry tomatoes and Parmesan with a bit of mayo
  • butternut squash roasted with red onions, tomatoes, pine nuts and feta
  • salmon with edamame beans, lentils, tomatoes and sesame seeds
They all have a base of mixed leaves and/or baby spinach or rocket.

What are your favourite salads? How can I mix this up a bit? I’m happy for up to 20 mins prep.

@Hoppinggreen - no, I haven’t. Maybe I should! I’m a bit wary of beetroot as it’s about the only thing I really hate, but maybe I’ll give it a go.

Seriously, I loathed it until I had some raw in a restaurant and now I love it.
You might still not like it but it’s worth a try raw, very good for you too 😁

I had a really simple one at a cafe yesterday and it was gorgeous. Just roasted veg (there’s was red onion, beetroot and carrot, but you could easily miss out the beetroot if you’re not keen) with sunflower seeds in a balsamic dressing. Tasted a bit coconutty too, think the veg was probably roasted in coconut oil.

Tinned tuna
Chopped hardboiled egg
Chopped cucumber (seeds removed)
Mayonnaise
Mild curry powder
(Optional tinned sweetcorn)

Very seventies but surprisingly tasty.

Lots of lovely ideas I'll use here! I'm don't really have any regular recipes (and am interested to know how people are stopping avocado get unappetising and brown if you make in advance/. But I do fine having peppadew peppers, gherkins and / or a jar of artichokes in oil handy means I can always make a boring salad more appealing.

You can put lemon juice on avo to stop it going brown, but I usually only add it just before eating.

I really like to marinate cubed chicken breasts in fat free yoghurt and tandoori paste. Then sprinkle on some nigella seeds and bake.

I usually have this on a spinach base with cucumber, red onion, celery, chopped apple with a mint, cucumber and fat free yoghurt dressing.

I also do similar with chicken, marinated in garlic, lime and chilli. Bed of mixed leaves, sweetcorn, red onion and peppers and pineapple.

I like couscous with grated courgette and carrot-pour over stock and leave for 5-10 mins. Sometimes I add feta or hummus and yoghurt and mint sauce. Or avocado. Or crumble falafels in.

Lots of good suggestions.

I like quinoa with finely chopped red onion; deseeded chopped cucumber; chopped raw red pepper; avocado; boiled egg and flaked tuna (if not fresh I prefer the John west tuna with a twist in packets). Plenty of black pepper and lemon.
