What's for dinner / today tomorrow

I have done a great job about limiting Christmas leftovers (albeit by putting alot of it in the freezer).

So today for dinner we are having Minestrone with garlic bread. Followed by treacle pudding and brandy butter.

Tomorrow

B- bagels, cream cheese and fruit
L- leftover minstetrone
D-Chicken stroganoff using up the final bit of chicken (which has been frozen since Christmas day) and the sour cream from the smoked slamon starter blinis.

Love to hear other plans from people. :) (Because I just love a food thread).;

Turkey fricassee and mash this eve, pea and ham soup also made today for lunch tomorrow and some portioned for freezing, and last of the turkey and veg will be curry tomorrow. Love Christmas left over week!

@HomeAGnome just chips with chopped up turkey, gammon, pigs in blankets and stuffing. Plus cheese because why not. And covered in gravy. Added a few dollops of cranberry sauce as well. Can confirm it was epic.

Eating cheese, crackers, hummus etc for lunch to try and use it up. For dinner tonight I'm using up the last of the mushrooms and leeks in a risotto with some smoked haddock and a poached egg on top.

Paprika pork and rice. We have a fair bit of Turkey left but that's about it. I will probably slice and freeze it for sandwiches when we go back to work.
Lots of cheese but that's just fine.

We had enchiladas and salad tonight. Tomorrow is hotdogs and onions with wedges then Friday and we’re having steak pie, mash and the last of the carrots and parsnips. No idea after that as shopping will be delivered Saturday morning and I’ve not thought that far ahead yet.

Broccoli and cheddar soup because for some reason DH bought broccoli in the Christmas food shop when we already had a ton of brussels sprouts and kale to have with Christmas dinner. So the broccoli was getting a bit tired by today.

A new recipe to me but I'm really looking forward to something vegetarian and a little lighter after recent excesses.

We had ham, cauliflower cheese, mash and peas using the Christmas ham - it was delicious.

I am quite pleased with my food plan in my OP. I have not had to buy anything and now (with the exception of the frozen uncooked ham) done with all the leftovers. Assuming the sour cream is still okay mind you. So chicken stroganof tonight.

For my fore mentioned lunch (6 people) in Feb I am thinking of doing slow cooked ham, potato dauphonoise, peas and honey glazed carrots. Then just a pavlova or something for pudding. That sounds okay I think? Nothing fancy but hopefully low stress.

Ham and dauphinois is one of my favourite things op!

We're having a sort of carbonara tonight with the end of the ham. No other leftovers apart from cheese but we'll work through that.

Out for dinner tomorrow, curry for the adults and McDs for the kids on NYE, steak pie on NYS as per my Scottish step dad's tradition.

Will have pho on Monday and then need to get my head back into the way of planning again.
