If I peel my potatoes now for roasts, and leave in water will they be ok for roasting tomorrow or Willy hey be nicer if I peel in the am ?

All our veg is always roughly peeled and in water overnight. Never had any issues.

Did everyone do that potato osmosis experiment in school? You need to salt the water to keep the equilibrium so your spuds don't take on water and go mushy. Something like that. School was a while ago.

I Peel and chop and cover mine completely in water with a splash of milk in it. Someone told me to do that 10ish years ago so I've always done it that way. Never ever had an issue

I always peel on Xmas Eve and leave in water till the next day. They never go weird

I've just looked on google and there is a whole world in differences of opinion in how to hold potatoes overnight in water 🙈 Don't look .

Put a slice of bread on top of the potatoes to hold them under the water .. that will stop them going brown .. perfectly fine to leave in cold water overnight like this

Yep, if the water is salted it’s fine, if the water isn’t salted they go brown.

Pat boiled them this morning, then drained, salted and sprinkled with polenta....roasted in goose fat for 20 mins then re roast tomorrow for another 20 mins...crunchy and delicious...foolproof every year
