If I peel my potatoes now for roasts, and leave in water will they be ok for roasting tomorrow or Willy hey be nicer if I peel in the am ?

They don't go weird in the water at all, they're totally fine to peel and leave in the water.

id leave them in cool water rather than a parboil, if you cook potatoes in cold oil they absorb the fat.

Also I've cooked my Turkey & beef. Fi they need to go in the fridge overnight or can I stash them in the oven?

Mine are parboiled for 5 minutes. Cooled on a baking tray. Put in a bag with a splash of cooking oil. Refrigerated.

Absolutely fine to leave in water overnight. I've spent the last 30 plus years working in large restaurants and we would have a walk in fridge full of buckets of potatoes in water for 2 or 3 days at a time. Just make sure the water completely covers them or the ones exposed to air will go orange.

Have you actually ever done it? Nonsense that they'll go all weird. It's what you should do if you peel them in advance.

OP you can parboil them now too if you like.

I'm doing mashed and they are peeled and quartered in water ready to cook tomorrow. Why do they need salt now?

In the fridge once fully cooled, unless you want food poisoning...

I'm going to risk cooking and mashing tomorrow as they'll be worse if I do it tonight and reheat 😥

Me too, and parsnips, sprouts and broccoli the same. I learned to do that from my mother and grandmother.

I will be parboiling and then part roasting, as Mary Berry does Grin

Then I'll just leave them in the roasting dish on the side, covered with a tea-towel, and they will only need a short spell in the oven to finish them off tomorrow. I use olive oil rather than goose fat though.

A splash of white wine vinegar can be added when boiling if you’re wary of them going brown (or in the water if leaving them over night.

I put potatoes in water but not the veg, they get done and put in bags in the fridge.

I’ve literally just peeled all the veg for tomorrow and left them in pans of cold water. Gordon Ramsey says it’s fine 😂

Leaving them covered in water would be fine. I don't peel mine at all though just cut off any manky bits.
