Boring but necessary, what’s for dinner?

Think dh and ds are on the leftovers from last nights roast.
dd is going to make something for her and a friend.
Which leaves me to my own devices. I’m not up for anything faffy or complicated, I don’t really like cooking, need something healthy (not soup!) - I’m craving a warm salad or some description so definitely not a takeaway…
What are your dinner plans tonight?

24 hours slow cooked beef topside joint. Slow cooked in beef stock, paprika, cayenne pepper, cumin, Kashmiri chilli powder, onions, garlic, Birds Eye chillis.

Served with potato salad, salad, sour cream and salted nachos.

It's gonna be spicy

do you have brown lentils?
cook them,
have as a salad with feta and whatnot?

You can do an approximation of tartiflette with Camembert or brie? I really fancy one now too but have already made healthy vegetable soup (Mondays start off with good intentions here before all descends into chaos as the week goes on…)

DDs had pasta bake (veg, chicken stock cube and parmesan) followed by some rich teas dipped in milk, when they're asleep DH and I are ordering pizza and milkshakes...

Toad in the hole made with pigs in blankets, mashed potato and cauliflowrs.

Oldest is off school this week recovering from an op so he's had a quick lesson in how I cook in bulk when I expect a busy week. We took an hour and now have a big pot of mac, cheese and bacon, a pot of meat feast pasta, a pot of sweet potato, onion and bacon hash and enough mashed potato to accompany two or three meals. I can no longer locate the sink under the pans but that is a "later" problem. For now food is sorted for the week.

Pie with mash, peas, spinach, red cabbage and cauliflower cheese. Ds is having a steak pie and I'm having chicken, ham and leek (from farm shop not homemade).

I've stuffed red and yellow peppers with sausage meat and a little crushed garlic, put the 'lids' back on and put them in the over for 45 mins. Served with garlic bread.

Warm, sweet, garlicky and takes all of 3 minutes preparation. 😊

Well we are having stuffed jacket potatoes, cheese onion and bacon inside, some are having sausages alongside and I’ve got kale and broccoli to go on the side.
not quite the healthy dinner I was after but easy even if not speedy.
i couldn’t imagine tartiflette without reblechon 😱 I don’t think it would be as nice with Brie or Camembert although it’s not out of the question that I’ll give it a go one day if I can’t get hold of the proper cheese!
love toad in the hole but I would have wanted to make the batter for it this morning.
Also; bloody love a slow cooked brisket; I’ve got a brisket in the fridge for something later on in the week 😋
feeling very hungry now 😂

Chicken stir fry for us, with Korean BBQ sauce (Tesco). Now I'm looking at a packet of Tunnocks Caramel Wafers.

We had beef goulash, recipe from Gousto. I did it in the pressure cooker so it was ready in under half an hour.

We're in Yorkshire so I could make yorkshire pudding batter before I was in double figures 😃Takes me under ten minutes to throw a batter together, and usually that's done whilst the fat is heating. No measuring - just quick working by eye and mixing with a hand whisk and in it goes.

@swg1 yeah the batter takes minutes to throw together but it’s nicer made early in the morning and left to rest (well, the one we use anyway!), makes it so light and crisp 😋 any time we’ve done it in a hurry to make yorkshires, they are still nice but definitely not as good. Plus ds hates the batter anyways 🤬 so it was easy enough to switch for something else. Still, along with tartiflette, it’s an itch that will need scratching 😂

Second cold in two weeks here (three nursery or pre nursery children, many disgusting bugs). They had bread machine pizza with mashed butternut squash instead of tomato sauce.

I had sausages, hash browns and tinned mushy peas and it was delicious. But not quite the vitamin packed germ warding off kind of healthy feast I was planning to make this week.

And @swg1 that’s some impressive cooking in an hour, hope your ds recovers quickly.

thanks everyone for sharing your meals, some really nice tasting ones, I found a really nice looking brisket recipe in an book earlier which I may send to dh for when he picks up again and regular service resumes - where he makes all the dinners 😂😂
