Meat free recipes needed

Looking at bringing more non meat meals in to my weekly meal plan and I'm a bit stuck for ideas.

I don't want any meat alternatives (spag bol using quorn kind of thing) but plant /bean etc meals.

My go to are creamery mushroom pasta / pea & asparagus pasta/ spinach & ricotta cannelloni

I've looked on line and most seem to want to go down the spicy curry type dishes and don't particularly like these without meat in them.

Anyone got any great recipes?

Our easy veg dish is vegetable fajitas which we make with courgettes and/or roasted butternut squash.

I'd also love some non-meat inspiration. DD won't eat lentils which is frustrating as daal would be a good one.

I found veg everyday bu hughfearnly whittingsall very good for inspiration. And the new flexitarian in the Guardian. Maybe start by reducing meat and upping the veg and beans. So have a chickpea, chicken and pepper stew … and put lentils in.

I recommend this book so often on this site that sometimes I worry people may think I'm on commission (I'm not).

The orzo with roast tomatoes is a personal favourite.

What on earth was the point of posting this @Keyansier? How is that helping to answer the OP's question? None of us cares if you like eating meat.

I used to make a 20 min bacon and leek risotto, now I just make it as mushroom and leek risotto instead.

I make bol/lasagne but I pulse up carrots, mushrooms and peppers and then add red split lentils instead of meat or Quorn.

Becky Excell has got a really quick spinach and ricotta pasta bake. She does it with gluten free pasta but you could just use ordinary pasta. I also add soaked red split lentils to bump the protein content up.

Keyaniser it doesn’t matter why other people do this, the op was asking for suggestions, you don’t have any so why bother commenting?

Baked aubergines with feta cheese is one of my favourite veggie options.

Cut aubergine in half, lengthways, and slash the flesh in a criss-cross pattern. Drizzle generously with olive oil, season and then bake in the oven till nicely soft and brown.

Dress with more olive oil (you could also use garlic and chilli infused oil at this point if you want) and then crumble feta over the top. Bake again for 10 minutes or so till the cheese is melting/browning.

Lovely with a crisp, green salad.

It's cheaper, healthier, and better for the environment. Supermarket meat is appallingly cruel and high welfare meat is very expensive. I don't actually understand why you wouldn't, and I also love eating meat!

OP, we eat a lot of omelettes, curry, potato bakes, vegetarian pasta dishes, curries and stews. BBC good food is good for recipes. We tend to only eat meat at the weekends now, except maybe some higher welfare sausages about once a fortnight. It feels alien at first but you soon get into the swing of it and I don't notice the lack anymore.

Check out The Green Roasting Tin book, it has loads of tasty and filling vegetarian and vegan meals that we do when we want a meat free night.

This one in particular is great, a firm favourite of both me and DH.

You've really narrowed it down by not wanting spicy food. Some of the best veggie meals are made with spice!

Kwoklyn Wan's veggie Chinese takeaway has a lot of delicious recipes though I often go back to the same few because they're sooo good.

Jamie Oliver's veg is another good book. I really like these pierogies but I'd recommend doubling the filling. https://www.jamieoliver.com/recipes/broccoli-recipes/broccoli-cheese-pierogi/

This spanokopita is really easy and one of the few things I enjoy eating with a salad (I am not a salad person Blush)

www.jamieoliver.com/recipes/vegetable-recipes/black-bean-burgers/ - this also makes good "meatballs" omit the breadcrumbs and poach in tomato sauce.

Oh and if you don't like the green roasting tin, it doesn't mean you don't like veggie meals. I had 5 failed recipes and gave up. Binned it because I didn't want anyone else to experience the same disappointment. I say that as an avid user of cookbooks. It just didn't work without big adjustments to the recipes.

Our best book is Veg by HFW, and also Loads More Veg.

Sometimes the easiest way to cut meat is to make your usual meals without meat. I don't use any meat substitutes, just switch in some pulses instead of meat.

Roast veg (usually pepper, aubergine and courgette) and feta wraps
Vegetable lasagne
Roast aubergine and pepper pasta
Stuffed peppers (usually with Mexican rice, black beans and a bit of cheese on top)
Baked cauliflower Parmesan

I am not vegetarian but I don't like much meat at all these days. Must be an age thing. So am watching with interest.

One thing I have to ask is - do none of you lentil and bean lovers ever suffer from horrible gassy windy farts? Sorry to be crude but there is no other way to describe it. So they are out for me!

I like veggie croquettes, filled pancakes, and I make a veggie "lasagne" with semi blended veg and tom sauce with a mix of cottage and ricotta cheese for the white sauce. I don't use lasagne sheets, but make it in a circular earthenware dish that is exactly the size of flour tortillas and layer them up instead. It's very nice and filling. No beans or lentils though!

Jamie Oliver's book Veg is worth a look. He makes a lovely cottage pie made with root veg and lentils.

Plus his veg chilli looks lush.

I make a nice Mac and cheese but put cauliflower and broccoli in too. Then sprinkle it with breadcrumbs and more cheese and bake until crispy. It's lovely.

Linda McCartney does some lovely quarter pounders made from soya and the meatballs made from peas are nice too.

I cook a nice veg paella for my kids. And pea and asparagus risotto is delish.

I'm not a vegetarian but love all of these things.

When I first went veggie I farted for England. (It was a good job I was living alone at the time...)
After about 6 months it all seemed to settle and I don't think now I'm any more 'windy' than anyone else.
