Meat free recipes needed

Looking at bringing more non meat meals in to my weekly meal plan and I'm a bit stuck for ideas.

I don't want any meat alternatives (spag bol using quorn kind of thing) but plant /bean etc meals.

My go to are creamery mushroom pasta / pea & asparagus pasta/ spinach & ricotta cannelloni

I've looked on line and most seem to want to go down the spicy curry type dishes and don't particularly like these without meat in them.

Anyone got any great recipes?

I am making one of Rukmini Iyer's ones tonight - butternut squash, leek and fennel gratin, with hazelnuts and cheese on top. It's really nice.

I like her books a lot, but I struggle with finding enough that are low-carb, which I need to do at the moment. Most of the veggie things seem to focus hugely on pasta,, rice, etc. Or occasionally lentils, which I'm not keen on. I'd like more veggie recipes if I could find low carb ones.

I also like her baked aubergines with mozzarella, chick peas, and chilli, really nice and very easy, though the chick peas always burn a little when i'm doing it, so I need to find a way to put them in later or something.

Some meals that myself (vegetarian ) and my meat loving husband will eat together are.. lentil Dahl, home made falafel with hummous, pitta bread and home made salsa. Gnocchi with asparagus and thyme (cook gnocchi in boiling water, fry asparagus and thyme in a pan then mix all together with some Parmesan or equivalent. Spicy chickpea pasta ( cook pasta and chickpeas together in a pan, fry some onions, garlic and chilli, mix all together with Parmesan or equivalent). Look up joe wicks curried lentil burgers, they are without a doubt the best veggie burgers I've ever had.

I don't understand when people say they are doing this. I personally love eating meat.

It's often cheaper, healthier, and it adds variety. Less meat production highly likely to be both better for the planet and make it easier to feed the whole human population. It's more compassionate. It's also delicious. I also like eating meat by the way but I'm not so wedded to it that I can't see all the reasons to encourage us to eat less of it.

Oh and roast half a butternut squash with some garlic then mash it all up with some feta, pop back in oven to crispen up and serve with green vegetables or a salad.

And last one I promise 🙈. Halloumi dippers (chunks of halloumi dipped in flour egg then pan jo breadcrumbs baked in oven. Serve with homemade potato wedges) or cous cous stuffed peppers topped with cheese and baked in oven.

Ratatouille/ jacket potatoes & cheese w/ salad

Roast veg or spinach quiche

Roast veg, yorkshire pud, gravy, Cauliflower cheese

Mushroom rissotto

Veg curry /dhal / popadums

Felafel/ halloumi/ humous wraps with salad

Pea soup w/garlic bread
Leek & fennel soup

Mexican beans with rice, avocado, dour cream, cheese...

Mediterranean veg with sweet chilli Halloumi tray bake
Stuffed peppers with spicy rice and cheese

Next week:
Green mac & cheese (add cooked, blended green veg to cheese sauce)
Sweet potato and goats cheese warm salad

Others on rotation:
Sweet potato, goats cheese and spinach filo pie
Goats cheese & caramelised onion puff pastry tart
Feta, pesto and sun dried tomato puff pastry tart
Frittata
Gnocchi with veg & pasta sauce
Thai curry with baby corn, broccolini, mange tout and tofu
Tikka paneer naan pizzas
Sweet potato coconut dhal
Falafel carrot and hummus wraps

Most Indian and Mexican recipes can easily be adapted to vegetarian. We aim for 2-3 veggie meals a week for health and wallet reasons.

Half or quarter some new potatoes and par boil them.
Heat olive oil in roasting tin, add potatoes, halloumi, broccoli florets, season well (I use Lebanese spice), roast for 10 mins, give everything a good shake, roast for another 10-15 mins. Squeeze some lemon juice and sprinkle with pomegranate seeds to serve.

Melanzane alla parmigiana it's an aubergine lasagne type dish and very good, I did it when I was 17 from a slimming world recipe. I'm 31 and might try it again soon!

Oh, it’s you. That explains it. Are you still arguing the world is against you as a single person as the bread rolls are sold in packs of 4? Or are you still crying that the person serving you at the shop didn’t agree that you looked young enough to show ID and so said if want needed. Because you’re almost 30 and don’t look like a teen. 😂

Ho do yo umake the mediterranean veg with sweet chilli Halloumi? That might be low-carb and something I could have!

I have yet to be convinced by dhal, or any other lentils. Something about the texture bothers me. But sweet potato and coconut sound like nice things to have in it, so maybe I should try some day.

@MapleLeafForever I chop up all the veg and slice the hallloumi & put that to marinade in a bowl of sweet chilli sauce.

I put the harder veg into a roasting dish and then the softer veg & halloumi on top after 5-10 mins. Any remaining sauce gets drizzled over the top.

Im not great with timings but take it out as the halloumi has started to go golden.

Yep, absolutely. I normally do 2 courgettes, an onion and 2 peppers, plus whatever is in the fridge like broccolini, kale, butternut squash etc. That does 2 adults and a kid with a big appetite!

DH has quite an active job and exercises most days so tends to eat a LOT.
