Meat free recipes needed

Looking at bringing more non meat meals in to my weekly meal plan and I'm a bit stuck for ideas.

I don't want any meat alternatives (spag bol using quorn kind of thing) but plant /bean etc meals.

My go to are creamery mushroom pasta / pea & asparagus pasta/ spinach & ricotta cannelloni

I've looked on line and most seem to want to go down the spicy curry type dishes and don't particularly like these without meat in them.

Anyone got any great recipes?

Hi OP - loads of ideas here, is the no alternatives to avoid overly processed food?

I have been a vegetarian for years, I find meat eaters often like dishes I make with soya mince - it’s available at Holland & Barret, supermarkets & v cheaply at Indian grocers. I hydrate it with stock made of marmite in hot water & then cook with lots of onion/garlic/herbs/Tom purée. Good for bolognese, moussaka etc

Otherwise try lentil based dishes which are more digestible

I also like aubergine & canelli bean ‘meatballs’ (these freeze v well) and make my own bean burgers & nut loaf (the last I make in individual ramekins - a mix of finely chopped veg, nuts & optional peanut butter, either breadcrumbs or oats, and either egg or a vegan binder - flaxseeds or chickpea flour work: both burgers & nut roast freeze really well too uncooked.

DD is veggie so we have to do a veggie alternative for everything!!

I actually prefer my veggie lasagne made with red lentils and veg

couscous with roasted veg in a tagine sauce

i know you said you only like meat in curry but I adore a paneer curry

stir fry and noodles is an easy veggie one.

risotto - I like a mushroom one but also do a bake in the oven tomato based one

Wow! thank you all for the suggestions, i will spend the weekend looking in to all these and making a few.

the reason i started the post was due to looking at trying to adapt my diet to incorporate more fatty fish, less red meat, lean white meat and to have more plant based meals rather than 1 or 2 a month. (i've just been told i have high cholesterol!)

i wanted to have these meals as "proper" vegetables/pulses meals and for them not to try to be a meat like taste meal (i might as well cook them with meat! :)

I'm really looking forward to trying out lots of these and the two that have jumped out at me is the baked aubergine with feta and black bean veggie burger (cos i want to make the bean balls!)

chilli with two types oftinned beans and lentils.
spag bol with lentils. (it really is not the same though. we like it but it did take a while to get used to the lentil version)

stirfry with bean sprouts edamame beans and seeds.

mushroom, courgettes, onions, canellini or butter beans in a white sauce (soya milk) add toasted sesame seeds.

bean soup: carrots onions, peas, sweetcorn, tinned beans, flavourings: balsamic vinegar, soy sauce and sesame oil. serve with noodles, or brown rice.

stew: potatoes, tinned beans, carrots, onions, : flavour: garlic and red wine.

Oh if you like fatty fish, you can add salmon to the galettes - delish!

And you can also poke pieces of peppered smoked mackerel into a cauliflower cheese, that's yummy!

I am following this feed for even more inspiration!!

We went on the ‘meats a treat’ diet after watching game changers on Netflix… and now, I actually prefer veggie stuff (occasionally have a craving for something… but once that’s satisfied I’m back to veg!) We also try to avoid ‘fake meat’, it’s just not as good.

We have a few books we really like; Mob veggie (pie on the front cover takes a while to make but it’s lovely.. but we use puff pastry), Joe Wickes veggie (the bolognaise has so much depth! And the squash wraps are super fast easy and tasty!),Vegan slow cooker (skinny little book but everything in it works), Meat-Free One Pound Meals (some meals are a bit basic so I adapt… probably end up costing more!). We also have the Jamie Oliver book and Dirty vegan but tend to not use them quite so much.

As someone else said - paneer in curry is lovely! It’s also a lot cheaper in Costco and freezes really well. Although I do sometimes need to hold us back from living on cheese! And I think someone else mentioned spices… I find Mexican has the best flavours for veggie.

If you want to add more oily fish then putting salmon fillets in a baking dish skin side down, spreading the tops with pesto, squeezing on juice of half a lemon and a splash of wine in the dish. COver with foil and bake on 180 to 200 for 20 minutes is a delicious meal. I usually cook spare to use in home made fish cakes.

Tin of sardines added to tomato sauce for pasta is good, cheap and boosts your calcium too.

Anchovies are a good sub for bacon if you are just adding lardons for flavour.

Seafood pasta bake (buy one of those bags of frozen mixed seafood and defrost) tinned tomatoes, garlic, chilli, pasta and cheese. Then bake in the oven. Delicious!

Pasta and some form of veg - I like mushroom an bean sprout - in a white wine sauce.

fry up your chosen veg in butter while part cooking pasta, tip a glass of white into the frying pan with your chosen veggies and simmer till pasta is just about cooked, stir in half a tub of double cream into the frying pan mix then add the pasta and cook till it’s all ready.

for the non veggies this is also amazing with chunks of gammon fried in it.

Following this. I'm trying to cut back to red meat once a week. I've started making thick veg soups which with added pasta is a meal in itself.
I've seen some spicy bean burgers I'd like to make.
Interested in the green mac and cheese receipe.
