@mamaduckbone your day of eating sounds nice, please can you share the recipe for the the Cajun chicken and rice traybake? Thanks

B- lemon yoghurt, banana, teaspoon peanut butter

2 oat milk latte's

L- buckwheat pancake with cheese, avocado and some tempeh

S- butternut and quorn curry in a peanut/ tomato sauce-
Was delicious.
1 square dark choc

mamaduckbone · 08/01/2023 14:38

@BettyCake the Cajun chicken is from Jamie Oliver's 'One' book which Dh had for Christmas:

4 Chicken leg portions, 3 mixed peppers, 2 red onions, 4 whole garlic cloves, 1tbsp Cajun seasoning, salt and pepper, olive oil and a bit of red wine vinegar, mix together and roast for about 40 mins.

Add a mug of basmati rice to 2 mugs of boiling water (we did 1/2 mugs for 4 people, but that's 2 teenage boys so big appetites) cover with foil, return to the oven and cook for about 20 mins until the rice has absorbed all the liquid.

Really easy and tasty.
