I had a couple of friends round last night - they come round fairly regularly. I was feeling a bit uninspired about what to cook - I feel like my repertoire has got a bit limited/boring. They don't eat meat or seafood and are quite health conscious so I go veggie or fish. I don't tend to do starters as its a very relaxed/informal type of thing - just the 3 of us - till DD 22 came back....
In the end last night I made a Thai green fish curry from scratch. The sauce tasted nice but after I added the fish it felt quite diluted down and not a flavourful (so that's a lesson for next time). We had it with jasmine rice. My friend bought mixed salad. For pudding I made an orange and almond cake - its gluten free, very easy and fun to make - we had it with vanilla kefir. To make it you boil two big oranges for an hour and then blend them (all the skin and pips dissolve to nothing) - once its cooled you add eggs, sugar, the almonds and baking powder. Very simple. The cake is very moist and a big hit.
