Holiday cancelled - any recommendations for new destinations?

We heard from the travel company today that our much awaited holiday to Japan has been cancelled and DH and I now need to think of where else to go at short notice. We are pretty well travelled having been to most European countries and quite a lot of Asia.
We like to be busy seeing different places, historical ruins, interesting buildings etc. We are happy with a day at the beach but not a week. We're ok with heat. DH is happy to drive to different places so we don't need to necessarily stay at one site. Don't want all inclusive or a family style holiday as we haven't any children. We'd also like it to be reasonably well set-up with health facilities in current covid times. We loved Sicily and Andalucia so a similar place would be wonderful.
Budget no more than £2500 per person to include everything and preferably a little less for 7 - 10 days.
What would you wise Mumsnetters recommend?

If you don't mind the heat, I always love visiting Seville in the summer months. Not so crowded but still with an amazing atmosphere. And is good as a base to go to other towns and cities. Not sure whether that was part of your Andalusian visits in the past.

We also really enjoyed (in Portugal) doing a trip from the Evora area, across to Monsaraz, then following the Guardiana river down to Alcoutim. Loads of really interesting castles in pretty much every town, the monolithic stones in Evora, museums about wine, pottery etc. the dam at Alqueva ... Oh - Mertola, which is known as the museum village, is mega interesting with the remains and ruins so accessible. Alcoutim has the only zip wire border crossing in the world which is quite fun.

It is probably a bit boring compared with what you probably want, but we had a fabulous time, drank some amazing wine and tasted some great food. It is easier for us as we already live in Portugal, but we never tire of visiting these places.

We also had a fab trip to Obidos, Nazare and Peniche over Christmas - but the waves are quite low right now, so probably not as interesting!

Northern Cyprus? Best with a car but lots to see, some history, nice beaches and good food.

Thanks so much for giving us options to consider. We've already been to some of those locations but I'll definitely do some research into the Portuguese locations as we haven't done that area of Portugal.

I love Andalusia but how about Northern Spain? I have had a couple of lovely holidays there. Mix of towns and cities and beaches and rural. We flew to Bilbao and went to amazing caves at Potes, walking in the Picos mountains, Gaudi house at Comillas, bit of beach time, history at Santillana. On another trip went to Roman bee hive churches at Oviedo, Santiago cathedral, other wild beaches. Bilbao itself with the art museum is a cool city, San Sebastián amazing food, went to France for half a day by paying a euro to cross a bay in a little boat at Hendaye. Eduardo Chillida sculpture park on the Spanish side.

Or similarly North East Spain, Barcelona, Sitges, great Dali museum at Figueres, Girona is a lovely town, beaches like Pals and medieval villages there too, Bisbal if you happen to like ceramics.

We rented a villa/apartment in one place and took day trips then a couple nights in a hotel in a city, or we had a road trip with hotels for a few nights at a time. I love planning holidays like this!

Croatia?
We had a lovely trip planned thay got cancelled in 2020
Were flying in to pula and hoping a car driving down island hoping the waterfall national parks
Ending up in split

Slovenia?

Tonnes of historical stuff from cave paintings to the 1990s, via a tonne of castles.

Loads of outdoorsy stuff in the Julian Alps, food is good, and Ljubljana is a lovely little city.

You could hop to Trieste in Italy, which feels Venetian

Thanks again for more ideas. We've already done Croatia and Slovenia but northern Spain and the Azores will give me more to research.

If you don’t kind the heat, how about staying in Sorrento and exploring the Bay of Naples area and the Amalfi coast. Easy local trains to Naples, Pompeii , Herculaneum and buses to Portofino and beyond. It might be hotter than Hades, but is beautiful

Korea, my husband is from there and I've visited both Korea and Japan (you can get cheap flights between the two). It's very welcoming and cheap to eat out.

Norway? Amazing country. Depending on how soon you're due to go there should be good weather.

Or Canada if you want further afield - Montreal/Quebec and surrounding area is amazing.

Charleston, South Carolina? Deep South, full of history but also a bit posh. Great beaches with pelicans circling instead of seagulls, different looking flora and fauna.. It’s a proper town so you can actually walk around as well as drive.
