Cheap lunches for summer hols

Cheap ish lunch ideas for summer hols please. Gluten free ideas welcome! I dont mind baking etc but want to be a bit organised for these starving dc at home all day or picnics out.

Fritata is good, uses up any odds and end in the fridge and keeps for a couple of days.
Tuna pasta with sweetcorn, peppers, celery (gf pasta)
Sweet potato salad with chopped bacon.
Sausage rolls or cheese straws.

Hmm gluten free makes it tricky.

When DS was younger I would buy enough stuff to make a picnic lunch every day (for all 3 of us as DH and I are teachers) and we'd have it at an NT place or the beach etc.

We'd have ham/ cheese sandwiches, an apple and an orange, a packet of crisps, a biscuit bar and juice made up in water bottles.

Not mega healthy, but dirt cheap. Just load up the veggies at dinner!

Boiled eggs and chicken drumsticks can be cooked in bulk and kept in the fridge for a few days. Great for picnics on the park or an at home lunch. Just serve up with some cherry tomatoes, cucumber and fruit.

Omelettes

Scrambled egg/beans/tinned tomatoes/ mushrooms on gluten free toast

‘Pinwheels’ - gluten free tortilla with soft cheese spread on it, then rolled up, then cut into sections. Also can insert ham, or grated cheese and marmite, or peanut butter.
savoury crepes - grated cheese +/- ham
boiled egg with (GF) soldiers.
baked potato with tuna mayo or baked beans
GF pasta with tomato and basil sauce & grated cheese. Can pimp by adding olives or ham or tuna or whatever.
Hummus and veggie stick wrap (another use of tortillas above)
