Impressive, easy meal to wow in-laws

I need some ideas for an impressive but easy meal to really dazzle my in laws.

FIL is a monster when it comes to appraising dishes. He's like a freelance, voluntary restaurant critic that nobody ever asked for.

No, I cannot avoid this. Yes, I must impress. The dish must be flavourful. I'm not a novice cook, I'm quite good at it, but I want something new to serve.

Salmon teriyaki is my go-to.

Garlic, ginger, chilli all finely chopped and lime zest in a pan with toasted sesame oil. Add 5tbsp soy sauce and 5tbsp honey. Stir over a medium heat for a bit (don't worry if it goes all dark and sticky and looks like it's burning - unless it smells like it's burning!). Add two salmon fillets (I use lightly-smoked) and cook both sides, leave it on top longer for a crispy top.

Serve on a bed of rice with steamed veg of your choice. Sprinkle with sesame seeds and add chopped coriander on top.

Yeah, I was going to say beans on toast.

Do a buffet with lots of salads and pasta dishes,, new potatoes warm beetroots cheeses etc with fresh bread rolls and a baked ham or a salmon then he can choose what he likes . Finish with a cheese board and fruit or a summer dessert thats fairly light I would buy most of it from marks and spencers save you loads of time and stress.

this is my go to fancy meal. Confit duck. Classic French bistro but so easy to make. I add a little white wine to the bean dish for added flavour 👌👌
