I am starting to get confused about which ones I have done, because of the non-midnight switch over time. Apparently I did the day before yesterday's, but not yesterdays.

I don't think so.
In this case, of course, the 'standard' is that the word in the title must be what's actually used in the name of the thing! In general I'd expect British English spelling to be used in matters specific to the U.K. and for US. E.g if you find the pages pertain to the midpoint of the U.K. and US, the former uses "centre" and the latter "Center".
For global issues, the 'American' is nowadays generally the norm - especially as in this case when both spellings are perfectly acceptable in British English (I suspect the 'American' variant may now be used more frequently).

If the subject is technical then the spelling should be whatever is the accepted international standard for experts in the field. So for instance, if you were looking at the pages on chemical elements, the spellings should be what's been agreed by IUPAC. So, sulfur not sulphur , aluminium not aluminum. In one case 'American', in the other 'British'.

I’ve definitely seen UK spellings before which is why I got stuck with this one as I wasn’t expecting it.

That was quick! I got one of the title words and the rest followed. Only annoyance was my autocorrect kept defaulting to the British (otherwise known as 'correct' Grin) spelling. So I should have got it in 5.

I lost a few chances on this one due to Americanisation of words, but my total failure to get the middle word of the title until I tried all alphabetical combinations of the initials. As soon as I got the right three initials the word popped straight in to my head!

I could easily have got that in at least 20 less words if I'd have not done either of those things!
