How long can a cake last?

Hi,

Just seeking some advice from MN foodies out there. I need to make a cake for Saturday. Will it keep until then if made today? Ideally I need to drop it off tomorrow afternoon. Could they freeze it until then or will it keep okay in the fridge?

It’s going to be covered in buttercream.

What type of cake? You you mean freezing it before it’s cover in buttercream?

Freezing it with the buttercream. It’s a strawberry and chocolate cake. It’s going to be covered in white chocolate and strawberry buttercream. The strawberries are freeze dried rather than fresh so they won’t go off. I’m just wondering if the cake will still taste good if frozen on Thursday and defrosted overnight on Friday or kept in the fridge the whole time.

Timings are just a bit awkward.
