Bacon & mushrooms, in a cream cheese/chicken stock sauce with loads of parmesan. Mmmmmmm.

Simple pesto and parmesan is also a perfect meal.

I love the Puttanesca from Jamie's 30 minute meals book. It's super quick and the Anchovies and garlic make it salty heaven. All store cupboard stuff too, I use dried parsley instead of fresh and skip the chilllies for the DC. They love it!

My absolute favourite comfort food is pasta with butter and salt and pepper.
Others are:

Puttanesca
Smoked salmon lasagne

Cajun chicken.
Diced chicken breast
Peppers
Tub of cream cheese
Tomato puree
Couple garlic cloves
Cajun seasoning

Gently fry as much garlic as you like.
I last did it with about 8 large cloves ish.

Pour in equal amounts of cream and chicken stock.
I use 300ml of each, does four large servings.

Bring to a gentle boil, add parmigian cheese, grated, at least 100gr.
Stir that in and turn down the heat, stir occasionally till it's as thick as you want it.

Add some cooked chicken now ( I might try cooking it with the garlic next time ...)

Pour over pasta of choice and stir in.

A good carbonara (bit not with eggs).

Smoked salmon and prawns in a white sauce.

Made from scratch bolognaise or lasagne or Macaroni cheese.

Courgette, garlic, basil and butter.

Cook courgettes in sunflower oil and garlic for 5/6 minutes. Drain and save for later (gets a better flavour).
Cook pasta.
Reheat courgettes in butter, garlic and basil. Ass a bit of pasta water and then combine.

Broccoli salmon peppers mushrooms cooked pasta - cover in cream and cheese and bake in the over for 20/25 mins

We also do a sausage a mushroom version

Sausage and cauliflower. Squeeze the sausages out of skins press on the pan until it’s browned like minced sausage, cut cauliflower into small florets add to pan and push down to brown. Add a glass of white wine. Reduce. Add cheese and pasta.

Has to be strong tasting sausages full of herbs and flavour.

Genarro ‘Two Greedy Italians’ or J Oliver has a version with lemon.

Fry finely sliced shallots in olive oil until they're caramelized, add anchovies and ket them melt, then garlic and chilli flakes, then lots of tomato puree and caramelise that too, to make a sort of anchovy and tomato jam. Boil pasta, drain off most if the water, then mix in some of the sauce so it coats the pasta.

I have two.

One is butter, garlic, chilli, king prawns and Parmesan loosened with a bit of pasta water - linguine.

The other one butter, black pepper, garlic, thyme, finely shredded cabbage washed and pan fried in the above then lid added so it sort of part steams, finely chopped walnuts, mozzarella chopped small and Parmesan shavings added at the end - fusilli.

Tagliatelle, smoked salmon trimmings, cream, lemon juice, dill, pepper, salt. It's a truly one pan meal that takes minutes to cook.

I feel ashamed when others are cooking from scratch but I love Asda's (only Asda, others aren't good) fresh tomato and marscapone sauce with walnut pieces and parmesan cheese.
