Pizza dough - can I prepare pizzas a few hours in advance?

I've made some pizza dough first time and it's gone double in size so all good. I have now "knocked back" the air and kneaded it again ready to roll out.

However I won't be making the pizzas for another 2 hours so would it be ok if I roll it out now and put the cheese etc on.

Is it ok for the dough to sit for that long before cooking- it won't double in size again will it!

Put it in the fridge until ready to cook should only expand in warmth

I wanted to roll out the dough and the toppings on but not put in oven till a couple of hours. Would that be ok

I generally don't let pizza dough rise prove

Make it, roll it out, onto trays add toppings, and then leave it till we are ready. If it's a while I might put them in the fridge, if not then I just leave them out
The base will pouff a bit, but it's not like you want it to be like a normal loaf.

You can say you have gone Deep Pan if they really rise up before you cook them!
