Something more exciting than banana bread?

My online shopping means we were sent over ripe bananas that no-one will eat. A week later and they're still uneaten and I can't bring myself to make banana bread again.

Anyone got any more exciting ideas for bananas that are only suitable for banana bread!?

Banana pancakes? … it’s a healthy recipe which uses bananas, porridge oats, eggs and a bit of baking powder. You need to blitz them together ( can use a hand blender) and then cook with a bit of coconut oil or butter. I serve them with fruit and Greek yoghurt.

Banana muffins - freeze really well and good for lunchboxes/ after school snacks

Peel, chop them up into chunks and freeze - the chunks then make fantastic smoothies, really creamy.

I always put mine in the freezer (peeled/halved and in a tupperware!) and then use them in smoothies. You can also make banana ice cream with them.

Its really hard to get the skins off again afterwards though, loads of the stringy bits stick on. I slice up and freeze in a bag for smoothies.

Don't want to freeze them or make smoothies with them, I should have said, I want to make something baked.

Banana flapjacks are a massive hit here. Usual flapjack recipe but less sugar, butter & syrup required as bananas add sweetness & moisture 😋

IMO banana bread is vastly improved by the addition of lemon zest. I find it very over-sweet otherwise.
