A challenge - ideas for using up single cream please

All I could buy was a large pot at weekend, lucky it was cheap. We've used about a third and I'm really trying not to waste food at the moment.

I might cook some pasta for my lunch and add onions, mushrooms and a small amount of cream, but still plenty left.

We're going away soon. Meals I have planned are cajun salmon, wedges and salad and jacket potato, breaded fish and beans. These are set in stone, I don't want to change. I was looking at doing a veggie chilli and pasta bake (into which I'd add left over kidney beans) for other two meals. These meals can be changed but I do have peppers I want to use. Any ideas how I can use the single cream (needs to be a veggie or fish meal)?. We're not really into desserts but I could possibly do a cake. I have lots of store cupboard stuff and frozen veg.

If you have freezer space, I'd make a creamy curry with peppers, chickpeas and any other veg. Can be frozen seeing as you are going away and curry always tastes better a day or so after making.

Salmon tagliatelle

Veg chilli and make it into sour cream by adding lemon juice.

Soup, whatever kind and just add cream to it.
