11 year old birthday

So it's my daughters 11th birthday in a few weeks. She was going to have a sleepover but her friends can't make it. I want to plan something really special for her (she's amazing and been through so much recently) but I'm not sure what to do or where to go. She says she honestly doesn't mind, but she is lovely and I want to give her a great birthday. We've done the usual touristy bits in London as well as all the major theme parks/Harry Potter studios. Can anyone think of anything that I might not have considered? We are in the south but happy to travel in the UK. Thanks in advance.

Look at the welsh cave trampoline park? Looks fab and I really want to go!
Or the midlands ski centre?
Pony trekking?
Or maybe a weeks driving dirt track?

Proper cream tea ? Trip to the theatre?

The main thing would be spending time with you - mine would love a special trip somewhere they had been before (ie theme park/etc) with a meal and think its fantastic!

A day shopping in a nice town would be fun for some kids, with breaks and attention and meals etc.

A night away together somewhere nice with a pool/activities?

Theres the ifly if its more an experience you're after. But check she's lookig for a "wow" experience - one of mine really would want to spend her birthday just with us doing things she enjoys without pressure to go do something out there!

There’s a Virgin experience of a sky diving session in a wind tunnel that looks quite fun - I think Milton Keynes and Basingstoke.

A trip to Bath to the Roman baths? Or could you stretch to a night or 2 in Paris on the Eurostar (a friend took her kid and they loved it!)
