What would you cook for yourself for dinner on a rare evening alone?

I've got a rare evening alone (well, just the baby and I) this week as DH is working away and I need to choose something really good for dinner. I want to make the most of it. I might have a dessert too Grin

I can't decide!

What would you have? Inspire me please!

It would be a curry for me as dh isn’t a fan, though I’d probably get a takeaway.

spaghetti carbonara as DH doesn't like creamy sauces. And its quick and tasty.

Or mussels as he's not keen.

He has fish chips and peas from the freezer - without fail.

A mix of cornflakes,Cherrios and shreddies with semi skimmed milk, English or Polish Blueberries and slices of banana. Heaven!

Something quick but tasty, some scallops to pan fry perhaps, or a bit of steak. For pudding you could have a choux bun with strawberries or panna cotta with some posh chocolate biscuits.

I have two things that I will always make for myself when I'm alone. The first is noodle soup made with chicken stock with leafy greens and topped with slices of fried firm tofu. Preferably with udon noodles but other asian noodles will also do, not the fine rice noodles though.

The second is matchstick cut courgette fried in olive oil with one or all of garlic, red chilli and leftover cubed black pudding (it has to have been precooked as otherwise it just dissolves when being stir fried). I then stir it into cooked pasta, preferably spaghetti or fettuccine but any pasta will do. I keep the leftovers in the fridge all mixed together and it's even nicer heated up the next day.

@Nnique Yes I know I could really  I just tend not to unless I've got some expressed milk. Not sure why really because I know that one glass should be ok!

@DinosaurRenaissance of course it’s ŷour decision and I wasn’t trying to say you should. However many women think they can’t so I thought I’d mention it just in case you weren’t aware.
