What would you cook for yourself for dinner on a rare evening alone?

I've got a rare evening alone (well, just the baby and I) this week as DH is working away and I need to choose something really good for dinner. I want to make the most of it. I might have a dessert too Grin

I can't decide!

What would you have? Inspire me please!

Whatever you like but never eat because your partner doesnt. In my case mushroom risotto or roast aubergene, tomato and corgette with pasta

I would do a little meze (aka carpet picnic) of things I like such as

Baked camembert
Nice meats
Caprese salad (with the posh mozzarella)
Fancy bread
A nice wine

And something sweet

Bit poncy but I've always loved "picky type food"

Steak chips mushrooms peas and a creamy sauce ( husband doesn't like steak )
Crab n chilli pasta - I'd use a while tub of fresh crab meat from Waitrose !!
Moules Frites

If I'm home alone and tried out ...cheesy chips and mayo !!

I'd invite a girlfriend round, we'd do a shared meal of Spanish tapas or Greek mezze or maybe Japanese sushi / gyoza. Each provide some of them and share.
Maybe make a dish or two each but mainly buy in...

Then just drink wine or fizz and chat.

Love evenings like that.

Chinese takeaway - probably set and sour prawn balls & noodles

If not perhaps fish & chips ( depending on mood I'm in)

Something from M&S like risotto or pad thai/laksa or I would get some of the large shell on prawns and cook in garlic & have with crusty bread & butter

Nice glass or two of wine and maybe nice cheese for later !

Hope you enjoy ( deeply envious as currently on a liquid diet following an op)

A big breakfast! Fried egg(s), bacon, sausages, mushrooms, tomatoes and fried bread to mop up the lovely juices. Pot of tea.
Possibly followed by a croissant or maple pecan yum-yum.
If I'm feeling like something more refined, then scrambled eggs with paremesan and truffle oil, accompanied by smoked salmon with capers and finely chopped onion. Toasted bagel with cream cheese on the side (a proper East End beigel-type bagel). Cafetière coffee.

I’d go with the Lebanese table stuff from Waitrose- absolutely delicious! Hummus with zhoug, tabbouleh salad, flatbreads, chicken shawarma, maybe some spinach falafel or the spinach and feta parcels. Mmmmm

I will tell you my dirty secret.
When my husband is away.
I eat boiled spaghetti with a knob of butter and tomato puree stirred through and a good big blob of grated cheese on top.

I'd either get a fresh crab, prawns etc from the fishmongers or order Chinese as dh hates it so I never get it.

Or, another thing I’d absolutely love to have on my own, even though we have it together quite often, is DH’s homebaked ciabatta (or a bakery/supermarket artisan loaf of some kind), a baked mini Camembert studded with garlic and thyme, drizzled with honey and olive oil (or walnut oil if you like), sprinkled with walnuts. Had with a bottle of wine. Plus charcuterie, olives, figs, breadsticks, and whatever other accompaniments take your fancy.

Oh I’m hungry now.

Ohhh that sounds heavenly too.

Seafood is another one of my loves. I don’t mind cooking if it’s for two or more. But for me alone I’d have to have that bought in as I wouldn’t want to have to prepare it. It’s one of those things I’d want to savour as if I was on holiday. Oh I’m in the mood for lobster! Or a seafood platter all to myself.

I'm married to a bon viveur who uses 17 pans and 86 ingredients to make a sandwich. So I always make a simple cheese omelette when I'm on my own!

When it's just me I always cook fish because it's quick. If I'm feeling extravagant scallops because he's allergic to themGrin
