What would you cook for yourself for dinner on a rare evening alone?

I've got a rare evening alone (well, just the baby and I) this week as DH is working away and I need to choose something really good for dinner. I want to make the most of it. I might have a dessert too Grin

I can't decide!

What would you have? Inspire me please!

If I was cooking probably salmon of some kind as I love it and dh doesn't. I would possibly make some kind of creamy sauce and make either spaghetti or tagliatelle with the sauce then flake the salmon through it, with a really nice garlic bread.

Or I would get a really nice ready meal. Or selection of picnicy bits. Or even a big, fluffy jacket potato, a nice ready made salad, grated cheese and coleslaw.

I really want dh to start working away again, it's lush not having to think about making a mans tea 😁

Fried mackerel, a huge salad and a tub of chocolate ice cream. DH is allergic to fish and can't stand the smell. I'd have to open all the windows afterwards though!

I would either get a really nice steak and have it with a baked potato and asparagus or go for the zero effort option and have a tomato omelette. There are two other people in my house and one hates baked potatoes and the other thinks omelettes aren't a real meal. I love both!

Either a juicy rump steak with potatoes dauphinoise and green beans or tesco finest fish pie or shrimp scampi with crusty warm bread

When my lot are out, I crumble some St Agur into a giant mushroom and grill it, maybe with a drizzle of Balsamic on top, and then I’d serve it with some tasty deli items from M&S or Waitrose like stuffed vine leaves, houmous and what sort of thing. None of my family eat blue cheese or mushrooms so that’s always my choice of dinner if I’m eating alone.
If I bring some brie and home made strong pickles and pickles ginger can I come round Wink

Last night I had the above with poppy crackers and tescos Italian deli selection

DH doesn’t like fish so I always have either salmon roasted in soy, ginger and garlic with noodles and broccoli or pan fried seabass, rice and roasted tomatoes. I always have a twin pack of fish to make the most.
My DH doesn't like fish either, so I'd probably cook a nice piece of cod loin with a herby crust, potato wedges and a salad (he doesn't really do salads either 🙄). Washed down with a crisp white wine....mmmmm

I'd do something dh isn't keen on so seafood pasta or a risotto.
For a treat night when only thinking of me I'd have Thai fishcakes and then a green curry.

Love poached egg on toast - sometimes with ham underneath -DH makes if for lunch when I'm at home sometimes

Noodles! With lots of ginger, chilli, garlic and salty soy goodness! I'd chuck in lots of veggies to make me feel holy and then pig-out on some mega shop-bought chocolatey pud that should serve four, but would just serve me. With custard.

Our takeaway options here are a bit rubbish sadly, so will definitely require at least some culinary effort on my part!

Luckily DH and I like the same things so there isn't anything I don't get to eat. The closest I can think of there is that he doesn't like mash as much as I do. A huge bowl of buttery, cheesy mash seems tempting...

Also liking the cheese platter/picnicy idea. And the garlicky prawns. And a really nice ready meal for low effort.

No wine sadly as am bf. Going to make up for that with a good dessert of some sort. Cheesecake's not a bad shout. Or maybe a little trifle? Or a big trifle..?

So many decisions to make. I think this has actually made it harder!

You do know that you actually could have a glass of wine if you wanted to? Not saying you should, by any means, but it’s perfectly fine and safe while breastfeeding.

Last time this happened I bought a rib eye steak and shared it with the cat. Sat on a bean bag watched one of my favourite films and then had a mini cheesecake.

I hate cooking fancy food just for myself so I'd probably have a bowl of pasta and pesto, some noodles or a takeaway

I wouldn’t be cooking. Probably just bung a pizza in the oven then finish off with some junk food and a glass or 2 of wine.

I'd perhaps choose a fancy ready meal- a nice creamy pasta dish maybe. Or cook something the rest of the family don't really like- in my house that's things cheese and bacon potato bake, chicken in white wine sauce with rice, faggots with mashed potatoes. Or cheese, crackers, pate, nice bread?
