Are vegetables still good for you if they are fried?

I shallow fried courgettes and mushrooms earlier and they were really tasty but are they as nutritious as if they had been cooked in a different way?

Nowt wrong with frying veg in oil. If it makes them enjoyable to eat then go for it!

I've heard that eating veg with oil helps the body digest their nutrients more easily, but I don't know if that's true.

I hope so, I only ever eat vegetables boiled, roasted or pan fried...
