What would you make with these tins?

Ratatouille
Pumpkin puree
Chickpeas
Adzuki beans
Kidney beans
Black eye beans
Taco mixed beans
Green lentils
Coconut cream
Coconut milk

These were all hiding in the cupboard of despair and have been for who knows how long. I can't think what to make with them. Any ideas would be appreciated. TIA

I mix a tin of beans into a stew of some sort e.g. kidney beans into a chilli mince

Ratatouille + beans could fill wraps or could be added to pasta

No idea of what I'd do with the coconut ones - I'd probably look for a curry recipe or something

Rice and peas with the black eye beans and coconut milk.
Pumpkin pancakes /scones (there’s a Nigella recipe, it may be online)
Mix the beans and ratatouille and eat with a poached egg and chilli sauce.

Green lentils are lovely in a warm salad. Griddle some slices of courgettes then put in a serving bowl with baby spinach leaves, grilled halloumi, the rinsed and drained green lentils, glug of good quality olive oil and some fresh coriander. Mix well and it's lovely!

Tray bake curry with the chickpeas/coconut. And squash or cauliflower or beetroot....
Tray bake chilli with the kidney/?mixed beans...could use for chilli and also burrito filling...

Any other beans add to stew or white beans add to green veg with garluc/lemon/chilli for pasta sauce
Green Tray bake cookbook is fab ....especially as trying to eat less meat!

Pumpkin puree...give to the dog!

Ratatouille - side dish
Pumpkin puree - pumpkin muffins or a simple cake (or pumpkin pie)
Chickpeas - hummus or bake to have crunchy chickpeas with the ratatouille. Or as chana masala (Indian chickpeas)
Adzuki beans - I’m not a fan, look up adzuki pie
Kidney beans - in a chilli
Black eye beans - yum! A soup or stew (I like leek, pepper, carrots etc with these)
Taco mixed beans - Mexican dinner: with wraps or wedges or rice
Green lentils - a soup or stew. I’d do this tomato based
Coconut cream - in a Thai style curry
Coconut milk - as above

None of these tins looks ancient so I would not be in any rush

I actually would keep the beans around until I had veg I need to use up and then make a stew/soup

The coconut milk/cream could also go in soups or desserts if you are not curry fans

I would shove it all in the slow cooker with a tube of tomato puree and quite a lot of medium curry powder - add to taste. It would make a vast quantity of vegetable curry, you can freeze what you don't eat.

Ratatouille nice with meatballs in or as a side but would add herbs/olive oil/garlic..
Green lentils good in salad..

Crack a couple of eggs into the ratatouille for cheat’s shakshuka
Use the pumpkin purée in muffins/quick bread, or with the coconut milk and some stock to make soup

Taco mixed beans are a favourite in this house...
Heat in microwave or hob, squish a bit.
Fill an openable plate with tortilla chips, top with beans grate on some cheese, then put in oven for a few minutes.
We have it with guacamole, salsa and soured cream. A "Saturday tea" here.

Is the pumpkin sweetened? If not I'd add Thai curry paste, stock and coconut cream to make soup.

I'd use the chickpeas for pasta and chickpeas. It's quick, delicious and absolutely authentic southern Italian.

The green lentils would go well with dry red lentils to make a two lentil dhal. It's a Gousto recipe that I do quite often as it's delicious.

Chickpea and coconut curry, add sweet potato and spinach

Sausage and lentil casserole. Add mash

burritos/ fajitas with other beans.

Black bean ( or whatever bean you have left) quesadilla. Add cheese and sour cream
