Why does cheddar taste better grated?

I only like cheddar cheese and even then I prefer it grated

If I grate a load to go on a jacket potato, I end up having to grate more because I stand there snacking on it Blush

Grating increases the surface area so the flavour comes out more?

grating brings out the oils in the cheese hence intensifying the flavour

I won’t touch the pre-grated stuff. It’s usually dusted with starch to stop it from sticking.

Oh yes, grated cheese is irresistible. Red Leicester the same. I think it is more melty in your mouth, too, because it is small bits.

But it has to be fresh grated, not pre-packaged grated.

It's delicious if you slice it super thin as well. Like with a potato peeler or something. And easier to pick up... Grin
