Looks delicious, although I'd say this is more of a broth as it's quite thin. Either way, nice of you x

Ah yes sorry I left that info out, it's a chicken broth type of soup ie watery with lots of veg, potatoes, sweet potatoes etc. thanks! Smile

Lovely! Skim the the fat off the top and make some kneidlach to go with.

It looks great! And really good for you. Just skim the fat off the top and eat with good quality bread. The more you reduce it down, the more the flavour will intensify. But you want to balance that with not over cooking the chicken to the extent that it goes stringy. Perfect for this sunny but cold weather!

Okay thank you for those pointers, I appreciate it! Oh and DM is ill with COVID at the moment, that's why I cooked this for her, although yes, in the winter, a chicken broth/chicken soup is the best. Grin

Haha of course.

Boiled a whole chicken for 1.5 hrs on simmer
Removed it to cool
Added to the chicken stock/broth:

Carrots, onions, 5 garlic cloves, ginger (shaved and cut into squares) one whole lemon cut into about 4/5 segments (pips removed) potatoes and sweet potatoes cut into small squares(ish)

Added more boiling water but not lots

Boiled for about 20/30 mins

Added chicken (taken off of the carcass of course)

Stirring intermittently

Added salt, pepper, oregano, thyme

Another 10 mins or so then added spinach

5 mins with the spinach, still stirring

Then switched off the heat, Bob's your uncle, Fanny's your aunt Grin
