Mix crunchy peanut butter in a bowl with a bit of sweet chilli sauce, a bit of lime juice and some boiling water to soften it, adjust chilli sauce and lime to taste. Easy and delicious.

I thought it had coconut milk in it too

3 tbsp peanut butter
1 tbsp dark soy sauce
1 tbsp Rice wine vinegar
1 tsp sesame oil
1 clove garlic minced
I piece ginger minced
1 or 2 red chillis finely chopped

Whisk together over a low heat and loosen with water as needed.

For two portions I mix 2 tbsp peanut butter, juice of 1/2 lime, tbsp soya sauce, 1/2 tbsp sesame oil, pinch each of paprika and turmeric and tsp sriracha then pour a bit of boiling water into it and mix. The peanut butter separates at first and it looks really disgusting but keep mixing and it all comes together in a nice smooth sauce.
