How to make a roast chicken really tasty?

What are your tips for making a roast really good?

I usually do the chicken in a large tray with a lemon inside and butter under the skin. It's never realllllly tasty though.

This, you don’t get crispy skin but we don’t like it anyway and I suppose you take the foil off but it gives you wonderful juicy chicken and a amazing sauce/gravy

We're having roast chicken today. I buy the ones you roast in a bag and think it makes a real difference.

Any nice veg ideas to go with? Bored of our usual broccoli/carrots/peas

Marinade overnight in cider. Take it out and pat it down well and salt and pepper, rub all over with chili oil. I used to do butter under the skin but it never would get properly crispy. Also we do ours "beer can" style (with more cider) for the actual cooking part on the grill. Rotate 90 degrees every 15 minutes till done. Our favorite!

We cook ours on our Weber BBQ. The skin goes crispy all over and the meat is very tender. It's DP's favourite dinner.

Buy a good chicken. The ones we get are about £18.00 from the butcher. I then cook it on the circotherm setting of the oven.
