I'm bored of leek and potato and squash/ sweet potato soups that have curry leanings. Yet I crave soup in its soothing, healthiness.
Any good ones I should make? Vegetarian please but a definite cheese eater, not fussy and keen cook. Thank you 🙏

We have this at least once a week. Wipe your shrooms and use the stalks if you can.

Remember to take the bay leaf out before whizzing - don’t be me a couple of times!

I really like Jack Monroe's rosted carrot, garlic and chickpea soup. Also broccoli and stilton always a favourite.

Spinach- just a base of onion, garlic, thyme, leek, a potato if you want to give it some body, nutmeg and white pepper. Add a big bag of spinach, fresh or frozen, plus veg stock cook until wilted and blend. Serve with cubes of gruyere stirred through

Celeriac and red pepper is lovely. I adapted a sweet potato and red pepper recipe.
I bought a cuisinart soup maker before Christmas which is also a very large liquidiser. My DS17 uses it daily for his protein powder shakes so it gets plenty of use. And for once he has worked out how to clean it!

I do broccoli and potato with lots of onion, garlic and stock, with plenty of grated cheddar at the end.

Nigella's quick pea soup - spring onions chopped and fried, frozen peas, stock and pesto. So quick and delicious.

I love just roasting a load of veg and souping it up. Always tomatoes, onion, garlic. Swede adds some sweet deliciousness, peppers. I usually add paprika at the liquidising stage. I love making soup; it just always works, no matter what I throw in.

Onions, leeks, mushrooms, stock and thyme

It was another BBC recipe when I first statrted making it, but it's v easy and very forgiving (IYSWIM) so I never look at quantities now.

MIL makes 'bung it' soup which is frying an onion then bunging it and anything that looks a bit sad in the vegetable rack into stock to boil for a while and smooshing it up.

3 courgettes, 1 leek. Wash , chop, simmer in veg stock till soft. Take off heat, add a wedge of brie, sliced. Stir to melt, then blitz, season with salt and pepper. I use marigold swiss bullion as stock, very nice 👍

I make a really boring but delicious soup.

One large onion finely chopped- cook gently in some olive oil with a decent amount of fresh thyme.
Couple of grated carrots.
250g rinsed red lentils.
1 veg stock pot and about 750ml water
Cook until lentils are done and it looks thick.
Season.

Love it, I know it’s boring 😂
