My DS has been obsessed with colour change cars since he was 2.5, he's 5 now and still plays with them all the time. Hot Wheels Colour Shifters or the Disney Mattel Pixar ones. He also loves it when we freeze toys in water for him. Playdoh sets are good, mine love the popcorn and any food sets the most, and I give them cupcake cases and lollipop sticks to make cakes and ice lollies out of playdoh. Also really recommend Playmags (you can do a really cool domino rally with them as well as building, and they will be played with for years) and a Galt marble run. Crayola Washimals are good too.
