Vegetarian meal planning

If you’re veggie….what does your meal plan look like each week?
I need some inspiration Grin

Going to watch this thread for ideas! I'm useless at menu planning, but there's usually - pasta, a stir fry, and a baked potato. One of those will be starring mushrooms, and one will star aubergine. The rest of the week I scrabble around for ideas. (Not a vegetarian, but eat mostly veggie meals)

Staples for our week on a random rotation based on what ingredients we have in the house could include-

  • roast dinner (with quorn roast or equivalent)
-chilli con carne (either made with quorn mince but usually 5 bean chilli) -lentil or quorn bolognaise -lentil sweet potato cottage pie -jacket potatoes -some kind of mixed veg pasta bake -carbonara made with veggie bacon and mushrooms -homemade pizza and salad -enchiladas -tacos -mixed mushroom and pepper fajitas
  • quiche, mash and veg
-Mediterranean veg and hummus wraps (sometimes use naan bread) -homemade soup and crusty rolls -curry and rice (all different kinds) sometimes served with onion bhaji or samosas
  • ratatouille
  • Jamie Oliver scruffy aubergine lasagna
-avocado and limo linguini
  • casserole

Basically any normal dinner can be made vegetarian is the point I’m getting at…
Mince can be replaced with quorn equivalent or pulses
Chicken can be omitted or replaced with more veg variety or quorn

This list seems quorn heavy but in reality I would do a mixture of pulses, veggies and meat replacements so probably only having dinners which contain meat substitutes once or twice in a week. Same with dishes containing pasta
