What do you eat with dauphinoise potatoes if you are vegetarian?

I've recently become vegetarian. Dauphinoise potatoes are my favourite thing but I can't think what to eat them with. I don't tend to eat fake meat. Any ideas?

Mushroom Wellington? Or at Christmas time (might still have the ) Lidl did some really nice pastry things like garlic and spinach. I quite often have that as my "roast" element.

I share your views on fake meat - if you don't want to eat meat for humane reasons why would you want to pretend that you are?

I'd just eat the potatoes with some nice fresh greens to add colour and balance. Or maybe some mixed bean salad.

I recently added myshrooms and a whole camembert to Dauphinoise. OMG next level. Just have it with a salad. The recipie was in the Green Roasting Tin book.

I love dauphinoise potatoes too and I eat it with either grilled and seasoned cauliflower, beetroot patties, bean burgers or some other vegetable burger, like carrot or mushroom. I want something with a bit of a bite to it, as I think that works best with the potatoes. With that I have a salad of some sort.

I'm a sort of part time vegetarian (I eat meat only once a week) I'd just have dauphinoise potatoes with loads of my favourite veg like broccoli, cauliflower, sugarsnap peas...

This is an insane take. You might, I dunno, like meat but not want to eat it for the humane reasons you mention?

To answer the question, steamed or roasted veg, veg sausages, stuffed mushroom.
