What meals do you make when you are in a rush and have very little time. Today I am collecting the kids from school , then picking cat up from vets and have to get the dinner made and kids fed in around 30 mins. I have prepped the veggies for an
omelette and just going to give that with some yoghurt. Often have days like this and just don't know what to make that is quite healthy but quick that they will eat. What do you do?

I microwave my jacket potatoes and then finish them off in the oven to crisp them up. That takes 30 minutes or less.

Leftovers are great for quick meals. Yesterday we used Sunday’s and had a pie in 20 minutes. Leftover red wine gravy, leftover veg from making the gravy, some mushrooms fried quickly, frozen peas and a pack of ready cooked puy lentils. Leftover mash with grated cheese on top and stick it in the oven.

Heat tomato soup in a pan and poach two eggs in the soup - don't knock it till you've tried it !

On days like that I'd tend to serve something like rotisserie chicken with potato salad, coleslaw and a bag salad. The rotisserie chicken can easily be substituted for any other protein that you could cook in that time- salmon, chicken breasts/thighs, sausages, falafel, quiche, fritatta etc.
