What is my amaryllis plant doing?

It's flowers have died off & according to my dad, it's leaves should die off then I can store the bulb to grow again.

But it has this growing right at the top - is it going to flower from there?? I'm not sure I have anything tall enough to support it up there It's already 3ft tall!

That's a seed head not a bulb , snip it off and it will die back or just leave it and it will also dieback
