What can I make for dinner with these veg ingredients?

Courgettes, onions, sweet potato, broccoli.

I have no meat but have cupboard staples like rice, pasta etc.

You can make pasta sauce out of sweet potatoes but usually requires a cream ingredient such as cream cheese, so it depends if you have that.

Otherwise maybe just jacket sweet potato with beans, serve broccoli on the side.

Do you have lentils? I’d make Dahl. Lots of different recipes on bbc good food
Or if I had pesto, I’d roast the veges in the oven, cook pasta and toss it all with pesto for pesto and vege pasta

So either a veggie pasta bake or if you have eggs you could slice up the sweet potato into rounds, use that as a quiche bottom then fry off the veg with eggs and cheese, pour into the pie crust and bake for a healthy quiche ☺️

Do you have eggs? Make a frittata, cut and fry or roast vegetables, then add beaten eggs, bake in oven for about 20 mins.

Sweet potato wedges with the other veg chopped up, salt, pepper, oil, stick it in the oven, 180 for about half an hour, SP might take a bit longer.

Bake it in the oven with spices (curry or Med / whatever you have)
Have it with dahl if Indian spices, or some cheese, chicken or a mixed bean salad if European.

Or if you have eggs make a frittata

Rice bowl. Baked sweet potato chunks, fry the courgette and onion in thin strips, cook the broccoli and use to top a bowl of rice. Add a sauce - do you have lemon and yoghurt?

Definitely a curry with rice. Sweet potato and pasta would be horrible!

Do you have kidney beans and tinned tomatoes? I'd make a veggie chilli. Roast the sweet potato in olive oil, paprika and ground cumin.

Chop up all the veg and sauté. Add the tomatoes and chillie powder, simmer for 20 mins. Add the beans and heat for another 10 mins before adding the sweet potato.

How much of each veg do you have and how many people do you have to cook for?

Steamed broccoli with pasta plus lightly fried chilli, garlic and anchovies is a classic pasta dish.

Or courgette either cut in disks and fried or grated and fried over a low heat then served with pasta, tons of olive oil, tons of parmesan and pepper.

Or fry up the sweet potato and onions and have with pasta.

I like pasta for a quick and easy tea in case you haven't noticed Grin.

Do you have a tin of cannellini beans? You can go onto the bbc good food website and type in the ingredients you have and it suggests recipes. Usually find something I fancy.
