Wedding ice cream?

I need ideas for my February wedding! I've been to weddings with tricycle ice cream carts and LOVE them, they are so popular. However, our wedding is in February, in Scotland. It's likely to be bloody freezing. I love ice cream so I would still eat it but I feel like the guests might wonder why on Earth we are serving ice cream after the ceremony. I will probably also do a big sweetie pick and mix stand myself. What could I do instead of ice cream? Or would it still be a hit regardless of the lashing rain?😂

I love ice cream hit standing in the rain eating it doesn’t sound like the finest idea. I would spend my money on ensuring guests are very well fed and watered instead. There can never be enough canapés!

Fresh hot donuts yummy yum or a churros van. There is one at a designer outlet near where we live and it's always heaving.
