I make Nigella’s Spanish chicken quite a lot. www.nigella.com/recipes/spanish-chicken-with-chorizo-and-potatoes

I also do one with sweet potatoes and Mediterranean veg. Roast them together in a big pan, then once you’re in the last ten mins, put halloumi slices on top.

The hairy bikers Spanish chicken is also lovely, similar to nigellas but has paprika too. It's so good

The Roasting Tin book is what you need for this kind of thing - several in there are excellent.

Similar to the above but from a awaitrose recipe years ago.

Sausages, potatoes in wedges cherry tomatoes. Tossed in paprika, stock powder & lots of olive oil.

On oven for about 30- 40 mins , make sure to stir / toss during cooking.

Kids argue over the crispy burnt bits.

Whole chicken in a roasting tin with potatoes, onions and tomatoes. Salt, pepper, red pepper flakes (or chilli flakes if you can’t find these) drizzled with olive oil and the tiniest bit of water.

Served with bulgur made by: frying onion in a decent amount of button, loads of tomato purée (a spoon of red pepper paste of you have it but not essential) add bulgur and water and cook until done.

Served with thick natural yoghurt (Total Fage type stuff or Labneh) and nice fresh tomatoes.

This is the THING OF THE GODS.

Next day, though I cannot manage the whole MN chicken, I use the leftover chicken for pesto pasta or similar. There isn’t usually loads.

p.s. onions and tomatoes cut big and I usually cook covered with foil first then brown.

Also recommend the Roasting Tin books. I got the idea from the book to make a pasta bake with rice-shaped orzo pasta. Soaks up juices beautifully as it cooks.

I do a chicken bake thing involving chicken pieces (usually thighs, but any will do) plus veg from the bottom of the fridge - carrots, potatoes, courgettes, peppers, cauliflower. Shove it all in a baking tray and pour over a mug full of chicken stock mixed with a tablespoon of honey and a tsp of piripiri spices.

An hour (or less) in the oven. Includes potatoes so no need for extra sides.

Herby chicken
Chicken pieces brushed with garlic puree, seasoning, fresh rosemary and or thyme, and lemon zest. In the oven with quartered red onions and baby new potatoes that have been tossed in garlic puree and paprika. Add a glass of white wine to the mix and bake for 45 mins in the oven until the tops are crispy and golden brown and the juices are bubbling. Serve with salad.

Easy chicken curry
Or mix 2 heaped tablespoons of madras curry powder with a tablespoon of oil, 2 tablespoons of water and a heaped teaspoon of brown sugar. Toss chicken pieces in the mix (ideally 24 hours before and leave to marinade, but can be done just before cooking. Put in tray with quartered white onions, chunky sliced red and yellow peppers and peeled small chunks of sweet potato or butternut squash or carrot. Mix a tablespoon of mango chutney and a dessertspoon of curry powder or mixed spices into a tin of chopped tomatoes. Add a tablespoon of malt vinegar, and 200ml of veg stock or water with salt added. Pour into a roasting tin, mix the veg into the tomatoes and lay the chicken on top. Roast for 50 mins. Serve with rice or naan.

Stewing steak, new potatoes, baby carrots, seasoning, parsley, couple of knobs of butter, wrapped in tinfoil and popped in oven for a couple of hours. Uncover and give it another 15 mins just to brown up the potatoes a bit, serve with green veg. Yum.

Chicken breast strips, sliced red peppers, sliced onions, all tossed olive oil and Mexican seasoning, covered in tinfoil and into the oven for an hour or so, uncover and give it another half hour to roast it off a bit. Serve in soft flour tortillas or tacos with sour cream, salsa and guacamole.

Whole chicken with a lemon inside, potatoes, carrots, parsnips, peas. Splash of olive oil over the veg, butter on the chicken skin. Season. Add sage and thyme, and add about a pint of chicken stock. Cover with foil or casserole lid, oven for about 3 hours. Serve as a one pot meal. Save any leftover veg and chicken from the carcass to make into soup.

DS gave me the The Roasting Tin and the Quick Roasting Tin for Christmas and practically every meal I've cooked since has come from one or the other. The Quick Roasting is more useful IMO
