Your best risotto recipe

I’ve had a bag of risotto rice for ages that I’m yet too open.
Please can you share your best risotto recipe?
It’d be nice to have it for dinner tomorrow.

We use the Jamie Oliver mushroom risotto recipe. It is in one of his early books though.

Jamie oliver's cauliflower risotto is my favourite, although my family don't love it like I do so I make it when I'm by myself sometimes
