I don't know where to start, which cheesecake recipe is lovely and not too sweet? NY cheesecake, or traditional Austrian style? Ideally a base that's not made of biscuits but home made. Please share your favourite cheesecake recipe Cake.

German/ Austrian style is definitely better than NY/ British style if you don't want too sweet. The big difference being the former are baked and made with quark while the latter are just chilled and made with soft cheese.

In restaurants you only ever seem to get the baked ones, but I find them too dry and much prefer the creamy type.

Also don’t like a pastry base which is common in restaurants, it needs to be mashed digestive and butter!

what ever fruit topping you choose. can't go wrong BUT i'm not sure if you can get all the ingredients in the UK.

I know you said no biscuit bases, but I've made this one a few times and it's always gone down a storm.

The lemon, raspberries and sour cream balance out the sweetness nicely, so it's really not too sweet. Also with baked cheesecakes you have to be careful or the top can crack (doesn't affect the taste just the appearance), this one has a topping so if that happens it's pretty easy to hide!

My current favorite is the Burnt Basque Cheesecake. Very easy to make. I make it in a muffin pan with muffin paper liners.
