Doing the veg tonight - help please!

I want to prepare the veg for tomorrow tonight but I have questions!

I know to keep them stored in water but do they need to stay in the fridge (not much room in there with the turkey) or can they sit out?

Can I actually parboil the carrots tonight and store them in the fridge to roast tomorrow?

Don't want the dinner to be manky but also don't want to spend all day tomorrow peeling veg.

You can parboil veg in advance. I don’t think I’ve ever parboiled carrots but I don’t see why you couldn’t.

You can keep the spuds in a bowl or pan of water out of the fridge, but they need to be completely covered with water otherwise the edges will discolour.

I can't help much on the carrots because I steam mine rather than roast so I just peel and slice them then store them in a sealed bag in the fridge. I'd say they'd be fine in the fridge if you parboil them, just don't overdo it.

If you e parboiled them for roasting, you don’t need to put them in water. Let them dry completely, put them in a bag coated with oil and then you can just tip out the contents for roasting.

Leave the saucepans on the hob. Just cover the veg in cold water. Absolutely no need to refrigerate them

Thanks everyone!! I have the sprouts carrots and spuds all sitting under water (although the sprouts are quite buoyant and don't want to fully submerge Xmas Confused) hopefully all will be well tomorrow. Happy Christmas!

I don’t keep them in water, just put them back in fridge in plastic bags.
(Not pots and snips, I prefer them done on the day)

Sprouts or other brassica don't need to be in water, just root veg.

I only put the potatoes in water. The carrots, cauliflower and sprouts are washed and put in the steamer.
Creamed leeks and onion sauce are cooked and will be reheated tomorrow.
