I'm trying to meal plan to save time and looking for some easy quick ideas for things I can do over and over again. There's usually two adults and 3-4 kids here. My imagination (and enjoyment of cooking) has abandoned me for now!

Mac and Cheese
Roast chicken and potatoes
Pizza
Hot dogs....

Chili with rice
Spaghetti Bolognese
Cottage pie
Stew done in the slow cooker, served with bread or jacket potatoes
Jacket potatoes with tuna, cheese or leftover frozen stuff
Sweet and sour chicken (uncle Ben's sauce) with rice and broccoli
Chicken curry (jar sauce) with rice and supermarket naan/poppadoms
Baked salmon, potatoes and veg
Baked sausage with tomatoes, either chopped into pasta or served with mash (Jamie Oliver)
Jamie Oliver Saturday afternoon pasta (tuna and tomato pasta)
For kids only - packet macaroni cheese
For kids only - pasta with cheap jar sauce, cut up hot dog sausages or cold cooked sausages and sweetcorn
I would do pesto pasta but they don't like it.
Chicken and rice -fry peppers, onions mushrooms, cherry tomatoes etc with chicken, cook rice in chicken stock with some peas and sweetcorn, combine on plate maybe with garlic bread.
Frozen pizza
Chicken nuggets and oven chips

We have a rice cooker and I find this makes rice really easy to do as an accompaniment, much nicer as well as always perfectly cooked and fluffy. You can season it easily too so it doesn't have to be bland plain rice.

Jamie Oliver one except I swap out the balsamic vinegar for a square or two of dark chocolate, and add big cubes of sweet potato.

I tend to add spice as the recipe amounts give a very mild version.

Pesto pasta

Stir fries

Freezer to oven jobs

Casseroles (cheat versions - prepped veg, quorn chunks, packet or jar casserole sauce. Long cook time but quick prep if you have a slow cooker even better!)

Jacket potato+ beans/cottage cheese/tinned chilli/tuna mayo (for dd I'm veggie)/bolognese sauce

Stuff on toast - beans, tinned mac cheese, spaghetti hoops, eggs

"Mixed grill" or basically a fry up but for dinner - eggs, bacon, sausages, mushrooms, tomatoes, hash browns or tattie scones, beans...

Ready meals at times but I'd add some microwaved veg like carrots or beans or sweetcorn or peas etc

Omelette and oven chips (chips just for me)

Pie and mash (pie from chippy but we didn't like the chips - dd hates potato - so I'd make instant mash to go with for me and dd would have bread and butter)

This is from when I was a full time working single mum and dd was at the stage of clubs and classes every sodding evening!

ByeByeMissAmericanPie · 26/01/2022 08:22

@JackieWeaversZoomAc - genius!
I’ve had a sachet of Katsu curry sauce hanging around in my freezer. Why did I never think of drizzling it over fish fingers??
🤦🏼‍♀️

JackieWeaversZoomAc · 04/02/2022 22:54

Oh year fish fingers are the bomb with Katsu sauce. When I first made Katsu I pounded the chicken, crumbed it, fried, sliced etc. It's delicious but takes time. Not great on a Wednesday after work.

Once I figured out that fish fingers worked there's no going back.

The sauce is super easy (carrot onion curry sauce) to make & freezes well too.

Following- great ideas!
