I'm trying to meal plan to save time and looking for some easy quick ideas for things I can do over and over again. There's usually two adults and 3-4 kids here. My imagination (and enjoyment of cooking) has abandoned me for now!

Mac and Cheese
Roast chicken and potatoes
Pizza
Hot dogs....

Hidden veg Mac and cheese
Fajitas (with chicken nuggets for fussy kids)
Fish tacos (we use the crispy chicken old el paso box and use salmon instead of chicken)
Fish finger butties
Smoked salmon pasta with a cream sauce (my fussy 4 year olds favourite meal, strange kid!)
Pizza
Tuna pasta bake (4 year old just has pasta and the vegetables)
There's a few others but usually someone complains about it!

Here we have quite a lot of ‘on a stick’ it’s usually some kind of chicken and veg combo with different marinades or spice rubs on the chicken, lemon and garlic, tikka paste and yoghurt, honey and mustard etc. Veg whatever needs using up, usually peppers, cherry tomatoes, red onions etc. I sometimes mix it up a bit my subbing chicken for haloumi or sausages, chorizo etc. For some reason the stick seems to make things that are otherwise rejected, acceptable.

Yesterday I made a copycat version of a pasta dish we had in Italy with tomatoes, fennel and nduja.

Tonight I was trying to make space in the fridge for the Christmas shop so did nacho chicken. Chicken mini fillets and peppers, in a dish topped with the salsa left over from yesterday’s veg chilli, topped with crushed left over tortilla chips and grated cheese. Served with sweetcorn and salad. Went down surprisingly well!

Tomorrow I’m doing tuna, sweet potato and chilli fish cakes which I’ll make extras of for the freezer.

After that it’s onto the Christmas menu!

We got Gousto for awhile but stopped because the quality seemed to go downhill after the first lockdown. Now we just use their menu cards and buy the stuff ourselves. We're a veggie house and our regulars are:

Nasi Goreng
Shakshuka
Lasagne Primavera
Halloumi Burgers
Palak Paneer
Marmite Mac and Cheese
Lentil Dal
Pan Haggerty
Paneer Chilli Noodles

There's more, we have about 30 cards we tend to go through but the above are regular picks.

TealSapphire · 24/12/2021 00:20

Tuna pasta bake
Toad in the hole
Paella
Traybake of potato wedges, chorizo, chicken, red onion
Traybake of Mediterranean veg and cod
Traybake of chicken thighs and spiced rice
Mediterranean chicken orzo
Chilli loaded wedges
Home made chicken nuggets/ fish nuggets

These a re brilliant, I will check that book out!

I like the idea of the recipe cards, used to have them years ago and also could make a sort of binder with quick ideas in.
