Best almond flour and coconut flour recipes?

Hi! I'm struggling to bake with these flours. I know I can't replace them with normal flour on a 1:1 basis. I do use recipes which call for these specific flours, but they don't turn out like the pictures and don't have the texture a 'normal' dessert would have. Does anyone have any winning recipes? Thank you in advance! :)

I use almond flour for low carb biscuits, breads and pancakes.

I made these crackers tonight but I'm going to bake them tomorrow so can't report on what they're like: www.wholesomeyum.com/recipes/paleo-crackers/ I added chopped fresh rosemary, shaped the dough into a cylinder and rolled it in chopped walnuts and seeds.

Coconut flour always needs more liquid than the recipes state. It also works best if used with another flour.
If you use a basic Crazy Cake batter/recipe you can substitute in coconut flour - just add more water.

Nigella brownies~almond flour is the same as ground almonds I believe. I’ve made this recipe with ingredients labelled as both, they seem very similar, but both worked well.

I do a cake very similar to the orange and almond linked above plus Nigella's brownies, which have also been mentioned.

@crispinglovershighkick have you made the crackers yet, and were they crispy? It’s great your family enjoys your low carb treats too. I make sugar free gluten free low carb desserts and they’re not popular in my house 😂

@MinnieMountain the torte looks so indulgent! It’s basically an almond cake with chocolate chunks right? I love the looks of the orange cake but does it taste too eggy with 6 eggs?

@IbizaToTheNorfolkBroads @InTheLabyrinth I has forgotten about seeing Nigella’s brownies! They look really rich and I love brownies but don’t usually bake them or use that much butter (!) so I think I’ll have to be brave and try!

Sophie Grigson has a chocolate and hazelnut torte thingummy which is the most wonderful chocolate cake ever- that's made with almond flour.

@PAFMO that looks decadent! I don’t drink so would remove the orange liqueur. What’s the texture like - fluffy, soft, moist, gooey, fudgy? I wonder if it would work with ground almonds instead of hazelnuts.

Any traditional flourless cake recipe made with almonds has a ton of eggs in it so it rises, not quite sure how a cake can be too eggy though Confused. The orange and almond recipe is a Spanish recipe associated with Santiago de Compostela, it's called Tarta de Santiago and is decorated with an ornate cross in icing sugar, it's really very delicious. Top tip is to microwave the orange.

The French recipe Reine de Sabo (chocolate and almond) and the Italian Torta di Nocciole (hazelnut rather than almond) are also delicious and very similar.

You are correct about the other one. It’s delicious. Goes well with yogurt.

Rick Stein also does a version of the orange cake. It's fabulous, and all my gluten-free friends love it.

The crackers are good, buttery and crunchy. They're less crumbly than the ginger biscuits so easier to work with. If I make them again I'll try an egg wash to stop the seeds from falling off.
The main challenge is not burning them, they go from raw to brown to very brown very quickly.

It does! I've made it with ground almonds as have never had ground hazelnuts. It's a soft gooey grown up chocolate cake.

@JaninaDuszejko what I meant is that some desserts can have a strong egg flavour rather than the flavour they're supposed to have e.g. chocolate, cinnamon etc. At what point do you microwave the orange? Do you mean instead of simmering it for an hour like the recipes usually state? Thanks for pointing out the other desserts!
