What do you do with your turkey crown?

Bought a fresh crown today. We’re not having a roast dinner on Christmas Day, and instead we’re having a buffet to include cold meats. So I’ll be cooking the crown in advance on Christmas Eve. I was planning to put herb butter under the skin, but was wondering if anyone had any other tips, bearing in mind it will only be eaten cold the next day, so would like it juicy and tasty 😋 Any top tips please?

i cook mine for hot but lots and lots of butter in a deep tray cover it in two layers of foil put it in the oven and leave it for the time it needs to cook , if you fancy a citrus hint quarter lemons and oranges and place under the crown

Thanks, I’ll do that, I usually stuff a chicken with lemon quarters and I’ve got some lemons that are looking a bit tired so it’ll use them up 😊

I’m going to bribe mine in a mixture of buttermilk, seasoning, citrus and garlic for 48 hours, then stuff butter iunder the skin before roasting

Start it off breast down in salted water to keep it moist then turn and baste with oil. Take the foil off at the end to crisp up the skin.

@KittytheHare Ooh I used to brine mine years ago too, then I stopped for some reason…I might pick that tradition up again!

I cover mine in streaky bacon too. That's what my Dad always did.
